meals for the week 11.30-12.5

I had the HARDEST time coming up with a meal plan for this week. Apparently after Thanksgiving, I am completely unable to think of meals that don’t involve turkey, mashed potatoes, and broccoli casserole with gobs of cheese and butter.

Which is why I reeeeealllly had to come up with some good meals for this week. Is falling into a deep depression after Thanksgiving a thing? Thankfully I have some leftover cranberry sauce in my fridge still. Only 3.5 weeks until Christmas dinner! ;)

I didn’t plan anything for Saturday because it was a weird day – and well, I didn’t shop until Sunday!

Sunday – roasted veggies, leftover turkey (total bust – read here why)

Monday – one pan mexican quinoa

Tuesday – stuffed pepper skillet (so I can get that recipe to you!)

Wednesday – white bean and asparagus pasta with pesto

Thursday – quesadillas with black beans & spinach, pico de gallo (we eat these a lot… can you tell?)

Friday – pizza

Girls’ Lunches

Monday – veggie burger, broccoli, bread with butter, pomegranate arils

Tuesday – deli turkey, cheese, avocado, grapes

Wednesday – grilled cheese, peas, applesauce

Thursday – peanut butter & jelly, yogurt, orange slices

Friday – deli turkey, cheese, bread with butter, frozen blueberries

For me, I usually buy the big commercial loaf of Udi’s gluten free from Costco. I used to make my own bread all the time but I got out of the habit of doing that!

Yummm! I am planning on making that Mexican Quinoa this week too! And I’m with you - I have the hardest time coming up with meals after holidays!

what kind of bread do you use for your girls? my 13 month is so fickle lately.

I typically use a whole wheat bread that doesn’t have high fructose corn syrup and minimal ingredients!
