A year ago (pretty much to the day) I had a few days off because of a “polar vortex” that made its way through Chicago. The SAME thing is happening right now, and I have the day off today. The winds in Chicago are going to be around –35 degrees, so no school for me. Woohoo! I’m one of those crazy teachers that doesn’t mind making up days at the end of the year. I totally enjoy these winter weather days. I’m so excited to stay at home and play with my ladies today!
I took pictures of most of my food yesterday, so I thought it would be fun to do a little WIAW! Let’s get to it!
Breakfast – 6:00 AM
All the coffee in the world couldn’t help me yesterday. Brooklyn decided she was going to be up a bunch on Monday night, so I was exhausted come morning. For breakfast, I had a slice of toast with peanut butter, chia seeds, and banana slices. I always get the commercial loaves of Udi’s gluten free bread from Costco – one slice fills me up. They’re huge!
I also stopped and got – you guessed it – more coffee on my way to school. The drive was horrible. We were slammed with a bunch of snow Monday night, and I always forget that people forget how to drive when it snows.
Lunch – 11:30 AM
This is totally not a picture of my lunch from yesterday, but it was kind of similar! We went out, and I got a Cobb salad at a breakfast place we frequent sometimes. Gah, this salad is making me miss Montana. Court? Want to go back?
Snack – 4:00 & 4:30 PM
While I was driving, I snacked on a banana on my way to Target. I spent way too much time there after running into my cousin (whoops!). I also picked up some new KIND granola bars. They’re delicious! I got the peanut butter chocolate variety, and I had to try one the second I got home. Emerson needed her water cup – you can’t see it in the picture, but she’s doing her very dramatic whine that would indicate that that exact moment, her life is overrrrrrrrrr. How do they learn these things so early? Cracks me up!
Dinner – 6:00 PM
Dinner was delicious. I bought some frozen turkey burgers from Trader Joe’s the other day, so I “grilled” those up on the stovetop and had some delicious toppings. Yum! I could eat one of these for dinner every night. On the side we kept it simple with some frozen veggies. Voila!
The girls weren’t a fan of their turkey burgers – well, Brooklyn finally was after I showed her how to dip her pieces in ketchup. That girl would eat ketchup all by itself – oh wait, she did. Gross! 😉
I had some dark chocolate after dinner, and I’m sure I’ll have a snack or two before bed. For now, I’m cuddling up on the couch, catching up on last night’s Bachelor and binge watching Criminal Minds.
