Happy Monday! I hope you all had a great weekend, and I hope some of you have the day off today. I for one am definitely going to enjoy my extra day with the girls!
This weekend was pretty low key, but it was exactly what we needed. As of yesterday, we are finally all healthy and back to our normal selves – woohoo! Friday night and all day Saturday were spent cuddling on the couch with Emerson – that poor child is always hit HARD when she is sick. I freaked out on Friday during the day when my mom texted me and told me her fever was around 104. Yikes! We ended up having to alternate Motrin and Tylenol every three hours for 12 hours or so until it broke. High fevers like that are no fun with little ones, that’s for sure.
Now that things are finally back to normal around here, I’m hoping to snap back into things pretty quickly. Last week was full of not so great food choices as well as only one workout (last Sunday) before the girls got sick. I’m starting this week out on a good foot and hopefully will get a good workout in while the girls are napping today!
I searched around for some good meals for this week, and I’m pretty excited to try out some new things this week. I stuck a tried and true turkey chili in the mix as well so I could have some easy lunches this week. Today I’m planning on doing a little more prep and boiling some eggs and chopping some veggies!
Saturday – leftover Chicken Taco Chili
Sunday – The Best Turkey Chili You’ll Ever Taste (it’s true – it’s pretty delicious!)
Monday – Roasted Vegetable Stacked Enchiladas
Tuesday – Creamy Chicken and Rice with side salads
Wednesday – Oven Baked Chicken Fajitas
Thursday – Slow Cooker Teriyaki Chicken with broccoli and brown rice
Friday – leftovers/wing it
Saturday – out!
With that, I’m out to enjoy our day – “see’’ you all tomorrow!
