Gooooood morning everyone! Thanks for all of your understanding on my taking a much needed, albeit unplanned break! With it being the start of a new week, I thought I would get back to sharing with you the dinners we will be eating over the course of the week.
I have to say, I’m usually not one to plan much but dinners (snacks, lunches, and breakfasts I typically “wing”), but I am starting a new challenge today so I took the time to prep out some food in the kitchen yesterday afternoon. More on that challenge to come tomorrow!
This week I’m keeping it simple in terms of the dinners. There are some weeks where I like to try out a bunch of new recipes, but this week is pretty insane/busy. To keep my head attached to my body, I didn’t want to make much fuss! I always plan Saturday – Friday, so the first few meals are what we ate over the weekend.
Meals for the Week
Saturday – Classic Spaghetti & Meatballs
(I’m not kidding you when I say that was the best “classic” spaghetti recipe I have ever made – those meatballs… yum!)
Sunday – Southwestern Chopped Salad
Monday – Turkey Meatloaf Muffins, roasted potatoes, mixed vegetables
Tuesday – Fajita Quinoa Bowls (with chicken)
Wednesday – Grilled Salmon (for her), Grilled BBQ chicken (for him), sweet potatoes, roasted veggies
Thursday – Leftovers
Friday – Wing it/out/take out

Hug it out!
For as much of a lover as Emerson is, she sure gets mad when she doesn’t get her way… or if her sister is in her way. I like to think that she just does everything in life with great passion. This hug was a result of Emerson pushing Brooklyn out of the way when standing at the door to go “bye bye” – because really, being out the door two seconds in front of your sister actually makes a difference in life. #truth

Even though the girls are early risers (think 5:30-6:00 most days), I sure enjoy my mornings with them. Cheerios, the couch, and cartoons are how we begin most of our days. #yesiletmytoddlerswatchtvfirstthinginthemorning
The more acronyms the better. After the girls went down for their nap on Sunday afternoon, I enjoyed a little R&R on the couch with a BLAT and some Gilmore Girls via Netflix. Why oh why have I not re-watched this entire series yet? I love me some Gilmore Girls! #idonthaveahashtagforthisscene
