Remember those nights in college when you stayed up until 3 AM, drank a lot of beer, and still managed to roll out of bed for an 8 AM lecture? Those days are long gone. Did I do the afore mentioned last night? Not at all. But! I did go to bed around 11 and had to wake up at 4:30. I felt like I was hit by a truck this morning.
Instead of throwing my alarm clock at the wall like I wanted to, I forced myself out of bed, threw on my running clothes, and hit the road to the gym. After a quick 3 mile run and ab workout, I was ready for a shower and breakfast.

This morning went by pretty quickly at school. I had several students exclaim, “THIS MORNING IS THE BEST MORNING EVER!” due to the fact that we got to watch a science video. However, about 20 minutes in, they were so done with it. My colleagues and I were not though – they needed to watch it whether they thought nasty bacteria/parasites were looking good under a microscope or not.
Sorry to speak of parasites right before I show you my lunch….
Today’s lunch was a stir fry from Flat Top. Last night when I got mine, it went from a massive bowl of veggies and rice to a pathetic baby stir fry after it was cooked. Then after I forgot to put my tofu into the stir fry, I was still really hungry. So, I made another stir fry but also asked the server to bring me a side of tofu. The tofu arrived before the stir fry and after eating all that protein, I wasn’t hungry anymore!
I’ll tell you why it’s worth it. At Flat Top, one stir fry is about $10, and if you get 2 or more, it only adds about $2 to your bill. Why would one NOT take advantage of that?
I also had a fruit salad…
This afternoon I had my usual almond and apple snack on my way to the doctor. I had a chiropractic and nutrition appointment at 4:30 so I had to book it after school.
When I got home, I opened up my crock pot and found this.
I think this may be reason number 209343892039 why I am a vegetarian. First of all, this looks disgusting. Second of all, it is supposed to be meatloaf. I had never made meatloaf in the Crockpot before, and I’m pretty sure I’m never doing it again. The husband ate it up and said it still tasted like meatloaf, but it looked disgusting. I call this Epic Fail Meatloaf. Tomorrow he’s getting more meat slop as half of it is left. Perhaps I will make it into a Sheppard’s Pie?
On the menu for me was a pile of roasted veggies (green beans, onion, green onion, green pepper, and broccoli) – seriously, why were all of my veggies green?
I also had a large green salad.
But the real star of the show were these….
I finally made Angela’s High Protein Garlic Mashed Potatoes. I don’t know why I never thought about putting beans in mashed potatoes before, but it was so good! You couldn’t even taste them, but it gave a really creamy texture to the mashed potatoes.
I told the husband there were beans in them and he said, “like green beans?” To which I laughed at and told him no. Nevertheless, he loved them.. even the skins which I was too lazy to peel off the potatoes.
I normally wouldn’t be able to make a meal out of mashed potatoes, but these were really packing a protein punch!
After dinner, I really wanted to make some muffins, but had a mini melt down instead because our house is muggy and sticky and hot. Much to my dismay, the husband told me I’m imagining things. I decided to just make the muffins tomorrow when he allows us to put the air on because it will be warm outside.
Tomorrow is also a big day for you all as readers – I’ll give you three clues as to what may happen…

Wow, gotta love the deal for the stir-fry!
I have had way too many kitchen failures however I think the one that takes “the cake” would involve pro-star over here deciding to make a pizza on the bbq. But, instead of buying pizza dough she, unknowingly, buys a pie-crust instead. Don’t ask me how I did it, it’s been over a year and I”m still trying to figure out how I did that.
Your dinner looks so fresh and nutricious! I have to go those mashed potatoes a try.
Have you ever tried polenta? Its delicious. Give it a shot! Its good with a little bit of butter, rosemary and garlic salt. I am OBSESSED. Its so so good and its gluten free!
I would love to do polenta because it’s delicious, but! I’m corn intolerant!
I still have a hard time understanding how you do the 4:30 wakeup call. I’m always patting myself on the back for 5:10. Clearly I’m small potatoes compared to you… lol
4:30 is really not much different than 5;10 - can you tell that’s how I make it through? I tell myself that those extra 40 minutes of sleep aren’t really worth it.
Are those mashed potatoes fabulous or what? I loved them! I once tried to make a 3 course anniversary dinner. Course 1 was just bad tasting course 2 involved a pizza that would NOT cook and course 3 never baked. I cried and we ordered take out.
They were really great!
I always get defensive and upset whenever I make anything that turns out badly. It’s probably because I’m a perfectionist and I want to please others!
Oh, yes, I remember those days. Except, I would accidentally sleep through my 8am lecture!! C’mon…staying out ’til 3 was way more important, right? RIGHT?! haha.
Most notable is when I was making a polenta pizza, and went to sprinkle garlic salt on it…but ended up flipping open the wrong side of the cap (so that instead of the side with the little holes to just spriinkle it, I opened the side with a gaping hole so you could get a measuring spoon in it) and dumped just about all of the garlic salt on the pizza. Uhhh…not thrilled.
Those mashed potatoes look/sound awesome!! Love the idea of adding beans. Beans are my go-to if I need to add protein to something, haha. Can make a meal out of anything that way.
And ohhh, yes, I have had epic kitchen failures. Never meatloaf in a crockpot, though
