Being the dork that I am, I really wanted my Fall Flavors Giveaway to be on the first day of fall. Because of this, I didn’t get to share my day with you yesterday and well, I know it made both of us extremely upset.

Thursday = always a rest day… well, from cardio morning workouts at least. I woke up to have a leisurely morning before work and had some hot oats to start a 90 degree day in Chicago. Really first day of fall? 90 degrees? Come on.

I was feeling a little fun yesterday morning, so I decided to have my oats in my signature margarita glass. It never fails to put me in a good mood!

Thursdays are crazy at school — every. single. week. I spend my mornings shuffling my kids around from special to special, get tons of grading done, and my head is spinning by lunch time.

I was happy to have this waiting in the fridge for me…

I also had the last of Ashley’s Sweet Tater Apple Pancakes (I totally butchered that name I think). I am very sad to see them go… ::tear::

Do you want to see the stack of papers I graded? There were TONS of them. Collecting notebooks from your students to grade an assignment is never fun — but it had to be done yesterday.

Yes, your head would be spinning too. Needless to say, after school I needed to BOLT! I got so much done during the day that it didn’t even matter either.

After school I had the usual apple/almond snack and came home to work on a few projects which included:

  • giveaway pictures
  • giveaway
  • baking project (recipe to come…. just you wait.)
  • make dinner

Dinner for me was delicious. I had Chickpea & Veggie Lettuce Wraps.

These were so insanely simple that I don’t even feel as if I can insert a recipe.. because they were just SO simple. But I will for you.

Chickpea & Veggie Lettuce Wraps

  • 1 can chickpeas, drained and rinsed
  • 2 pint grape tomatoes, halved
  • any other veggies you like, chopped
  • 1 tbsp olive oil
  • few splashes of balsamic vinegar
  • salt, pepper, garlic, chili powder, red pepper flakes to taste

Sautee all your veggies and spices in your 1 tbsp olive oil. Add your balsamic vinegar and chickpeas and heat thoroughly.

See? Totally easy.

The lettuce part kind of speaks for itself. Take any variety of lettuce (I used iceberg which we needed to use up since I never use iceberg) and wrap it all up!

Since I knew the husband wouldn’t eat anything with chickpeas, I made something special just for him… Meat Slop Sheppard’s Pie — using my epic failure of a meatloaf.. which I know was surely appetizing for you all. As disgusting as it even sounds, he gobbled it up like a little kid in a candy shop.

And then, he did this…

Yes, that would be parmesan cheese all over out kitchen table. This could have been one of the funniest things I saw yesterday (the first one being one of my students tying her shoelaces together with another student’s at recess so they could have a 3 legged race… and then they couldn’t get their shoes untied. I was dying of laughter. It took them 5 minutes to get separated.).

Anyways… he shook the can of parmesan and the top wasn’t on all the way… parmesan everywhere. Hilarious.

I spent the rest of the night blogging and watching Grey’s Anatomy!

Yumm I love lettuce wraps! And that’s too funny about the cheese… although I think the three legged race thing is pretty hilarious!

haha thats where the human vaccuum cleaner needs to come in, and suck all the parmesean up off the table. its funny cuz me and my brothers always did that when something spilt.. no wonder my mom thought we were ‘strange’ lol.

wow thats quite a big stackage of notebooks going on! hopefully the students have been getting lots of check marks ;)

I like your lettuce cups!! I’m not sure if my family would eat that, but it would be great for my lunches! Thanks for the inspiration!

I live in the Chicago-land area too and I am DONE with summer weather! Too hot for me, I’m ready for it to be fall!

I haven’t seen anything funny today really. One of my students asked if I was going to the frats this weekend, which is funny and odd.

You are a much better wife than me because I would have started yelling if parmesan cheese was flying around my kitchen. After 10 years I don’t find my husband’s messes funny.

His cable and sock collection? Well that’s another story. :)

Lettuce wraps and your lunch salad look yummers! My 2 year old never fails to make me laugh during the day, today he was really missing his older brother and sister at school because he was playing hide and seek by himself, felt sorry for him,but it was hilarious to watch!!! I’m off to enter your Larabar giveaway….awesome!!!!

Hi, I read your comment over at healthy exposures and just popped over to check your blog :-) adding it to my google reader this very minute.

Honestly, I was intrigued that you wrote in the comment how you are grateful for structure because I am pretty much opposite - love your blog, though, I’ve browsed back a couple of posts and I’m looking forward to following. I started blogging when I was despairing over how hard it is to eat good and tasty food when corn, dairy and gluten intolerant - actually I’m just about to wrap up my blog for this time around, but a girl’s still gotta eat and I love getting inspiration from places like your blog!
