stuck in a rut

I’ll be the first to admit that when I find something I like, I overdo it. I’m a meal repeater, which could be a federal offense in the blog world. So, how do I keep all you reading? I pretend like I’m really interesting — when in reality, I’m really boring.

Thanks for still being here…. you know my deepest, darkest secret now.

Don’t even hate me for having overnight pumpkin oats topped with apples, raisins, and peanut butter this morning. I told you yesterday I was going to have it again — if you’re even the least bit upset, you’ve brought it upon yourself.

 

I totally did switch it up though — do you see the little black dots? Chia seeds! I barely ever put them in my oats, but I was feeling them today! I swear I’m going to have  something different tomorrow. I’m really excited about it too!

 

My kids were super quiet this morning. It may have been because it was Monday morning or they have decided to make me the happiest teacher in the world. Whatever the case may be, it made for a really calm Monday morning. I absolutely loved it. It was actually kind of eerie at some points though. I enjoyed not going completely bonkers before lunch (not that I normally do anyways — my class completely and utterly rocks).

Lunch today was leftovers from yesterday. I had a baby baked potato and baked bbq tofu. I am glad some of you found it to be hilarious that I put “bone suckin’ good” bbq sauce on tofu — there are not bones to suck! When I read that comment, I totally cracked up.

 

I also had an unpictured couple of figs, some grapes, and half a cashew cookie LARABAR.

After school I wanted to get some work done as I would be out of the classroom tomorrow afternoon and have meetings until 5 tomorrow. Since when are teachers supposed to be pulled out of class for meetings? Argghh… I would rather be teaching. However, that is besides the point.

When I got home, I was feeling happy (mainly because I got my workout out of the way this morning) and wanted to experiment a little with salad dressing. I am sick of paying almost $4 a bottle for the goods, so I created one of my own!

Dijon Mustard Dressing

  • 1/4 cup apple cider vinegar
  • 1/4 cup dijon mustard
  • 1/4 cup olive oil
  • 2 tbsp. agave nectar
  • pepper & garlic to taste

Whisk all ingredients together in a medium sized bowl. Refrigerate until use.

 

This was super easy — I was kind of craving honey mustard, but we don’t have any honey. So, I just made do with what we had! It went great with my ginormous bowl o’ greens for dinner (unpictured.. sorry, I am probably the worst food blogger in the world!).

I also had some very crisp kabocha squash. I told you… meal repeater. I just can’t get enough of this stuff!

 

Note to self: check on squash more often next time. It still tasted delicious and I ate it all up!

Can I just take a moment to tell you I think I cut myself about 3 time this afternoon while in the kitchen? I was prepping tomorrow’s dinner since I won’t get home until later than usual, and well… me + large knives = very dangerous. Just ask my parents.. from a very small age, I have not been the most graceful of females. My being a 5 yr old ballet drop out may have something to do with that.

 

Other than cooking my food to a crisp and almost cutting my hand off, the husband and I had a visitor tonight!

There is a neighborhood cat that absolutely loves hanging around our yard. I’ve never been a cat person, but he’s a cute little guy.

I gave him something to drink, and he just had a nice time relaxing on our porch for a while. He’s usually around every night. I may just have to get him some food at the store soon.

 

This does not make the husband happy as he is really allergic to cats, but I reaaally don’t plan on bringing the cat in, so I suppose it will be okay if we’re one of his stops every day.

 

I’m sorry my post was totally uninspiring today — I’ll be better tomorrow, I promise. If you actually want a good laugh (which I most likely failed to provide you with today), go read this post about How to Be a Healthy Living Blogger. Now this… THIS cracked me up. You’ll love it.
