cran-apple pancakes with pumpkin walnut spread

Everyone looks forward to Saturday mornings for different reasons. For me, it’s all about the pancakes. Most Saturday mornings, I look forward to being able to create some kind of pancake that will make me wonder why I had been living the majority of my life not eating pancakes.

This morning I went through the usual thought process: pumpkin pancakes? No.. that’s too pumpkin-y (I wanted to incorporated pumpkin into my lunch as well), peach pancakes? No… I would have to defrost peaches. Apple Pancakes? Okay… getting closer. How about cran-apple pancakes? I think we have a winner!

Cran-Apple Pancakes

  • 1/4 cup GF flour (I use Bob’s Red Mill All Purpose Gluten Free)
  • 1/4 cup GF Oatmeal (Bob’s Red Mill again…)
  • 1/4-1/3 cup almond milk (depending on what consistency you’re going for)
  • 1 tbsp flax seed meal
  • 1/2 tsp. vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • handful of cranberries
  • 1/4 honeycrisp apple, diced
  1. Mix your dry ingredients in a small bowl until ingredients are evenly distributed.
  2. Next, add your vanilla and almond milk and stir, stir, stir!
  3. Add your cranberries and apple.
  4. Heat a skillet to medium high heat — make sure you spray your skillet with cooking spray before you heat it!
  5. Drop three medium sized portions of the pancake batter onto the heated skillet. Heat approximately 3 minutes per side.

Pumpkin Walnut Spread

  • 1/3 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1 tbsp walnut butter
  • dash of vanilla, nutmeg, and cinnamon

Mix all ingredients in a microwave safe mug or bowl. Microwave on high heat for approximately one minute. Stir until smooth. Top your pancakes with this delicious spread!

After breakfast, I did some laundry and just really lounged around for a while. Then, I put on some running clothes and ran an easy 3 miles. I’ve been feeling so sluggish lately while running, so I didn’t want to focus on how horrible I felt. I went out there with no expectations on how I would run — I just wanted to enjoy myself. I took it nice and easy and actually had a pretty nice run overall.

After I ran, I took some time to go to the store for some items I cannot get at the farmer’s market this afternoon. Then, I set out to bake in my brand new apron!

I bought this apron with a CSN Stores gift card I won from Michelle a few weeks ago. It took me FOREVER to decide what I was going to use the gift card on! I am definitely happy with my purchase.

These look sooooooooo amazing- the pancakes look thick enough to be cookies!! And I could probably eat the filling with a spoon, too :) Amazing way to start a Saturday!

That apron is extremely cute! I keep seeing bloggers wearing their new aprons and it makes me want to get one too. The only one I have is one I made in grade 9. It’s surprisingly not too bad but still time to change things up.

I too make pancakes on Saturday mornings!! I made an apple walnut pancake this morn, but I have to say yours look so delish with that topping:) Love the apron, I will have to get one soon as well.

I love to spend my Saturday (and Sunday) mornings reading emails/blogs, drinking coffee, and preferably a run before work, but the sun comes up so late now :/

My Saturday mornings are reserved for lazing around and watching Sex and the City…every Sat. morning there is a marathon of it on TV.

I like to spend my Sunday mornings eating pancakes topped with warm cinnamon apple sauce. It’s sooo good, though I’m definitely going to have to try this soon! Pumpkin pie = the bomb, so anything that tastes like it is probably going to be amazing too.
