Many of you said after yesterday’s post that you were really gullible. I don’t think that’s true — I think I’m just really good at making up stories. Some may call it lying, I call it having a vivid imagination. Really it was lying — I just don’t want my mom to be mad at me.
As I told you yesterday, we went furniture shopping yesterday — we ended up with a media console to fill the void under our flat screen (can you seen it behind the box?).
Luckily for us, the husband has a convenient trailer — most times I love that he owns a landscaping business! It sure does cut those delivery fees down. I found it so funny when we took the console out of the box and had the box next to it, it had taken up our entire living room! There was no room for us to walk anywhere.
The final product:
I am in love with this piece — it is really sharp, but still has a rustic feel to it. We also ordered a sofa table for the side wall, but that was special ordered so it won’t be in for about 6 weeks. Until then, my foldable bookshelf will do just fine!
After all that last night, this morning was rough getting out of bed. Fortunately for me, I had quite the orange breakfast planned.
Nothing says love like pumpkin oats. Apparently I <3 myself because no one made these for me… I’m a one woman show over here in the kitchen.
For lunch today, I wanted to stay in the orange department — a sweet potato! This guy was probably the size of my head, which was good… because I was starving. I was in a meeting during my plan period and up until lunch time (the kids had a sub for an hour) so I didn’t have a chance to eat a snack. Lucky for me, sweet potatoes are packed with fiber and this filled me up!
It was topped with a lot of hummus (notice the orange lid in the background?)…
On the side I had a honeycrisp (thanks Mom!)
For a second I was trying to figure out a way to convince you that green and red mixed together makes orange, but then I decided to show you that my apple was a little on the strange side today.
Okay, in reality this was the same apple I used for my oats this morning — it didn’t come like that.
This afternoon flew by (as most do) and by the time I knew it, I had to rush home to make dinner — the parents (in law!) were coming over for dinner!
On the way home, I had an orange packaged snack: a cashew larabar!
Thankfully for me, the majority of the dinner was already hard at work cooking away in the crockpot all day — chicken, potatoes, and veggies were already done!
I am horrible with desserts when I ahve to prepare dinners, so it slipped my mind. While I’m not one that’s big on packaging, I had this in the back of the cupboard and put it to good use.
This is faaar too sweet for my liking — I didn’t have any for dessert because I just couldn’t even get over how sweet it was when I licked the spoon tasted the batter.
For myself and my mother-in-law, I roasted some butternut squash…
and some brussels sprouts
I love having people over for dinner. There’s something about watching someone (besides your Husband) enjoy your cooking and the hard work you put into the meal.

You would have a picture of my dinner, but well… see out that window? It’s dark! Pictures are horrible right now — anyone have any tips?
Oh well, I’m off to go eat some carrots or something just as orange. Am I telling the truth or lying? You probably will never know because I’m so good at making up stories.

Don’t worry they eat differently from me too! In fact, I was making dinner and made the husband go out and get canned corn because his dad loves it so much!

I love making my mom dinner - I’d be a little timid when it comes to many more people, though! People aren’t very open-minded to “different” diets around here. I actually didn’t realize that until the people in my nutrition class started quizzing me as to what I can actually eat due to the fact that I’m (gasp) a vegetarian flirting with veganism. That said - I should be braver because if my mom enjoys it then I think others would, too!
People area always nervous to try things with me too, so I never tell anyone anymore what it is until they taste it!
The entertainment center looks great!!
And not to worry about the orange, I swear my hands turn orange every October but I just say I’m taking “festive” to the extreme.
Love to entertain but I wish I had a house to do it in.

I like making dinner for my friends. We’re discussing doing maybe a “pre Thanksgiving”, but that’s still very much in it’s early stages…
I love having people over for dinner parties because it gives me a good excuse to bake without having all two dozen cookies staring at me for the next few days!!

Aw that looks like such a nice dinner!! How was the sweet potato/hummus combo? I’ve never thought about trying that, but it makes sense! (And it would be a great way to use up my hummus before it goes bad…)
Hummus going bad? You can send it right on over - I go through a 30 oz. tub in about 10 days!!

My friends and I have started a tradition of having weekly “weekend” dinner parties. They’re great motivation for pushing through the week and work. Yours looks fantastic! (As does that nice blob of nut butter that I want to devour)

We don’t really have dinner parties but I love having people over for dinner (is that considered a dinner party?) because I LOVE cooking for other people! Actually I just love cooking in general but it’s definitely more fun when there are others to appreciate it and compliment your greatness.

I’ve never really hosted a dinner party before, but last summer I threw a garden tea party for my friends. I spent two whole days baking all the desserts for it!
This whole sun setting a 6 PM is really not blog conducive. I would give you some advice if I didn’t need some myself! I prefer to attend dinner parties — way less stressful
Love having dinner parties and making pretty much anything. I’d say my go-to’s are Mexi dishes like quesadillas and Mexi pasta or a big pot of Chili is super easy.
