If the Grinch were ever to make a baked good, I’m positive it would be really ugly.

Like, really grotesque.

Probably green’ish, lumpy, and downright gross looking.

The people of Who-ville would have probably shunned his baked goods more than the Grinch himself.

Which is why when my batter today looked like this,

a certain song popped into my head.

You’re a monster – Mr. Grinch. Your heart’s an empty hole. Your brain is full of spiders, you’ve got garlic in your soil. Mr. Grinch. I wouldn’t touch you, with a thirty-nine-and-a-half foot pole.”

Yes, my baked goods reminded me of a green frowny monster who liked to steal Christmas from all the happy people in town.

I couldn’t let this happen.

I let the Cindy Lou in me come out and thought happy thoughts while this nasty wasty skunk was in the oven. I accepted this bad banana and hoped for the best.

So, when I pulled this out of the oven, you have to understand just how excited I was. A little green looking, yes…. but I immediately pulled one off the rack and took a bite into it.

The verdict? Wow.

Looks like the Grinch can’t capture my Christmas spirit like I thought.

I’m still not sure what these are exactly – I was going for a scone. That didn’t happen. A cookie? No, too big and cake like. A muffin? Not so much. After much brain racking this afternoon, I’ve still got nothing.

There’s pumpkin, there’s cranberry sauce, and they’re kind of a green color. How that happened is beyond me. Is it breakfast or a snack? Do whatever you want with them – just eat them.

Grinch Scookfins (a hybrid between a scone, cookie, cake, and muffin)

  • 2 & 1/4 cup gluten free flour
  • 1 and 1/3 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1/2 cup pumpkin puree
  • 1/2 cup leftover cranberry sauce
  • 1/4 cup “almond buttermilk” (almond milk mixed with 1/4 tbsp. lemon juice – let it sit for 5 minutes and let it “curdle
  • 1 flax egg (1 tbsp flax & 3 tbsp warm water)
  • 1 tbsp. maple syrup

Directions: Preheat your oven to 400 degrees. Mix your dry ingredients (flour, baking soda, salt, spices) in a large mixing bowl. Make your flax egg and almond buttermilk. Combine flax egg, almond buttermilk, pumpkin puree, cranberry sauce, and maple syrup in another large bowl. Combine and mix until batter is smooth. Create 6 large blobs (yes, blobs. You’ll see for yourself) on a  greased cookie sheet. Bake for 12-13 minutes at 400 degrees. Pray. Pray hard.

 
These don’t have a lot of added sugar because the cranberry sauce itself has tons of sugar and I don’t like my scookfins (haha this makes me laugh) too sweet.

I guess I do a good Cindy Lu impression.

If only the Grinch stole dirty dishes instead…

PS – The Grinch Who Stole Christmas just came on TV 2 minutes after I started to type this post. I’m a little freaked out. The Grinch can read my mind.

I was watching the Grinch too :) My most Grinch-like concoction is pretty embarrassing… my roommate and I decided to add some wine to our pancakes in college. It was red wine- they turned green??

This totally reminds me of when I was little and my friend and I would have “baking contests”. We’d head into the kitchen and throw a bunch of ingredients together and see who came up with the best baked good. We never knew what the call what me made, either!

So weird, my ‘Swingin’ Christmas’ Pandora station started to play “You’re a Mean One, Mr. Grinch” the MOMENT I went to your site, at first I read the title of your post and thought you had somehow added music to your blog, but then I realized it was Pandora… so very weird.

I made sunflower seed butter cookies that turned green. It was a reaction with the baking soda that did it - maybe something with that and the “buttermilk”? I don’t know. Weird.

I ate my green cookies too.

I love the Grinch. Its my favorite Christmas cartoon. I even like the Jim Carrey movie version.

Wow the tv read your mind..creepy. I love your muffin/scone/cookies! They look so good and obviously like everything else you make so healthy! The closest thing I have made to grinch like it is a green monster. Can I just tell you I love your style of writing..you are hilarious!

I did make it up - since I was going for a “scone” I looked at my “scuffin” recipe and kind of mimicked it… except put less liquid in it because of the pumpkin and less sugar because of the cranberries. Believe me, I have many flops in here!!!! :)

i’m pretty sure all my snacks end up looking ‘grinch-like’ when you mix lots of smooth textures or blend stuff together- it ends up looking like quite the mess!

These sound like they would taste like Thanksgiving in a cookie form! That’s funny that they turned out green though. Oh well, in my experience green things are always the best tasting! Green monsters, pesto, zucchini bread… it’s a tasty colour. :D

I love when you think a baking project is going to fail and it comes out great- it’s always such a nice surprise! That happened to me last week with a batch of peanut butter cookies- so glad that one turned out. :)

Haha! You’re just like me… I love making ‘hybrid’ words! Before I got to your recipe I was already creating words in my head to describe your dish… I came up with ‘Coocamusc’ (say it out loud, it’s cooky!)
… Oh yes and it looks delicious!
… And the most grinch-like thing I’ve ever made was just this week, when I tried to make a curry overnight in my Crock-Pot. Turned out to be a big brown mash but it was quite delicious!

These sound great- and love the use of the cranberry sauce- which is one of my favorite parts of Thanksgiving. Way to use up those leftovers. Oh, and incorporate pumpkin because I’m definitely NOT over pumpkins yet. ;)

Scookfins! Love that! GOL — giggled out loud, and though everyone writes LOL and stuff without actually laughing out loud (me too) I really did giggle!

It’d be easier to pick one thing I made that wasn’t grinchlike in all honesty. But it is funny -this week I indulged in my “Humpalsa” which is essentially a crapton of greens (spinach for one) a little bit of chikpeas and olive oil. (inspired bythe desire for an easily digestible hummus, because I eat it by the bowlful) And it is blindingly brightly green.

Kind of like a mix between hummus, salsa, and pesto. Yet, not a dip or a spread..
Yes I wracked my brain. Yes I feel the need to name my food. And yes, that explains my appreciation of Scookfins.

I’ve had that song stuck in my head for days now…and I haven’t even watched the movie in a few YEARS!

The most Grinch-like thing I’ve ever made besides my green monsters was an avocado buttercream icing (http://www.foodnetwork.com/recipes/alton-brown/avocado-buttercream-frosting-recipe/index.html a chocolate) avocado cake that I made for Halloween. So yummy!
