Confession: I used to be afraid of tofu.

Tofu is intimidating.  Tofu doesn’t taste right if you don’t make it correctly. Tofu looks funny when you pull it out of the package.

Water? Why is this stuff so spongy? Am I really supposed to eat this?

I don’t really remember my first experience making tofu at home, but I can assure you it wasn’t pretty. It probably resulted in tears or a tantrum, both of which I am an expert in.

However, with countless tofu experiences under my belt, I can assure you it can be done.

Repeat after me: I can make tofu tasty! I CAN make tofu tasty!

Yes, you can.

After posting my dinner from last night, I had so many people ask how I make my tofu. I’ll be honest with you – I have a few different methods. However, it always starts the same.

Generally speaking, I tend to buy Nasoya. It is one of the only brands of tofu that is sold around here, and it is by far my favorite. I can usually get it for $1.99 a block (I usually buy it when it’s on sale and freeze a few) and get two servings out of a block. Let’s face it – five servings per package? Get. Real. I’ve tried Trader Joe’s in the past and I’ll buy it in a bind, but it usually makes my stomach hurt for some reason.

Like I said, sometimes I freeze some packages of tofu if I buy in bulk when it’s on sale. The night before I want to use it, I will put it in the fridge to thaw out overnight. If you wait until the day of, you will still have an ice block of tofu that night when you go to cook dinner.

After I take the tofu out of the package, I always do the same thing. I cut the tofu block in half. Then, I cut the halves in half. Then I take the quarters and cut them in half. I always end up with eight equal sized chunks of tofu to start with.

Then I press the water out of it. Usually when I bake it in the oven, pressing a lot of water is not necessary. The heat from the oven will soak most of it up. But, I put a kitchen towel down, line it with paper towels, and place the eight slices of tofu on the paper towels. Then I use more paper towels to cover the tofu. Add one more kitchen towel to the mix and you’ve got yourself some tofu that’s ready to be pressed! I take my heaviest cook books and place them on the tofu for about 15 minutes.

When the tofu has been pressed, I then cut the eight slices into more pieces. I usually cut down the center (long ways) and then into thirds. Each tofu slab becomes six pieces. If you’re looking for some numbers here, you should have 48 pieces of tofu.

My favorite marinade for tofu is the following:

  • balsamic vinegar
  • olive oil
  • pepper
  • garlic
  • chili powder
  • basil

I just toss it all in a big bowl and line a cookie sheet with foil. Making sure I have greased the sheet, I make a single layer of tofu and pop it in a 400 degree oven. I bake it for 30 minutes, flipping once. Sometimes the oven is on 425 depending on what else I’m making, and if that’s the case, I lower the cooking time by 5 minutes.

What you’ll end up with is tofu that is crispy on the outside and chewy on the inside – absolute perfection in my book!

 

So go to your kitchen, face your fears, and make yourself some tofu. And remember, 24 pieces = one serving because the packaging lies. If you’re looking for someone to give the other 24 pieces to, I’m always available for dinner dates… just sayin’.

I love tofu…but I can only bake it at home. I’ve tried pan searing and other methods but it never comes out quite the right texture. Baked ‘fu though is good!

The first time I cooked with tofu I was sooo intimidated! I wouldn’t call myself a tofu master, but I’m much better now! :)

I am afraid of tofu! I’ve never actually eaten it though so I shouldn’t be. I’m weird about food sometimes. Tofu just sounds…eh…I don’t know! I am going to try it though!!! Eventually. What does it taste like?? lol. I actually just decided to cut out meat and dairy completely…I wrote a post about it, but I think that means tofu and I will soon meet.

WOW! That looks good! I actually tried to make tofu at home a few days ago but i put it in my george foreman. A lot of people told me what to do! Yours look fantastic and you have given me hope for tasty tofu! LOL

Hi Katelyn! Don’t be afraid - and yes, Food Inc. definitely helped me in my decision to becoming a vegetarian.. as did the books “In Defense of Food” and “eating Animals”.

Tofu honestly doesn’t taste like anything… until you season/flavor it. It takes on the flavors of whatever you marinate it in!

1st of all - I went to ISU too :)
2nd - I still have not mastered tofu! I have improved my skills over the years but it still tastes nothing like the tofu in an indian or thai restaurant. : ( I tend to order it whenever I go out and rarely make it at home because I just can’t seem to get it quite right.

I can not wait to try your recipe! Mmmm! I’ll have to let you know how it turns out.

I have to say I’m still kind of afraid. I’ve used it in a couple desserts, but NEVER as a main course. Don’t know if I ever will because (1) I’m a meat-eater, and (2) I’d have to make 2 dinners! The husband would rebel if I tried to force tofu upon him. : )

You have to do it slowly. I have yet to have the husband eat any. Start by putting a few pieces on the plate and work your way up! Just like a kid! :)

I looooove tofu :) Baked, blended, stir-fried, anything! As far as pressing it, I usually just wrap it in paper towel and squeeze it with my hands lol I’ll have to try it with the cookbooks on top next time!

It took me 10 yrs to figure out how to cook tofu at home.

Pressing it.
Buying extra firm.
Marinating it.
Slicing it thin
Baking it.

That’s what I do and all the tofu recipes on my site are all tested and approved of by toddlers and carnivores. lol.

But it wasnt always that way..i used to make either mush..or burnt dried out lumps. lol

I did something weird the other day- I “marinated” my tofu in broth. I used some veggie bullion cubes, made a strong broth, and plopped in my tofu pieces. Then, I heated up a drizzle of oil in a pan, I let it get really hot, and let the tofu cook in the pan for a LONG time. I flipped it, and it was delicious and crispy!
I always have a hard time getting my tofu crispy!

I’ve tried tofu a handful of times (not at home) and I just didn’t like it. I do like tempeh though, and I use a similar marinade sometimes. Most time I just throw it on a sandwich and call it a day. Maybe I should give tofu another shot though?

Tofu is disgusting. It is chock full of GMO-soy that will kill your thyroid, unbalance your hormones and create huge digestion/gastrointestinal issues. I’d love to talk to you about it more Chelsey, if you want :)

Okay, I actually just love tofu so much (I like it plain..) that I think I should be a master. I mean, no matter how I make it I almost always enjoy it. I can’t believe there was a time when I thought it was boring and gross!

You might have a sensitivity to some soy products. I find that my stomach hurts when I eat tofu that is not organic and could possibly be GMO. I use the sprouted organic tofu from Trader Joe’s now and I never get a stomach ache!
