If you’re anything like me, you more than likely try to get people to love you through food.
It’s okay — I’m with you on this.
If that’s the case though, only put chocolate chips in your husband’s pancakes if you know for a fact he likes chocolate in the morning. Otherwise, you’ll be very upset that he doesn’t eat his breakfast. Not that I would know or anything…
There’s still time to make Valentine’s Day special — it is only Sunday after all (February 13th). However, if you’re a morning reader, I’m sorry I couldn’t get to you before you ate your breakfast. Bookmark this for next year.
All you need is a heart shaped cookie cutter.
Don’t have one? Go to the dollar store — they’re a dollar. Or you could always come borrow mine.
It’s okay — I’ll wait.
Got one? Good. No one showed up here, so I’m assuming you all went to Dollar General.
Whether you make these for your sweetie, your kids, or just yourself — it’s worth it.
They might just be ordinary pancakes — but heart shapes makes it seem so much more enjoyable.
Valentine’s Pancakes for Two
- 2/3 cups gluten free flour mix
- 1 flax egg (1 tbsp. flax seed meal mixed with 3 tbsp warm water)
- 1/2 tsp. baking soda
- 1/4 tsp cinnamon
- 1 tbsp. turbinado sugar
- 2 tbsp oats
- 1/2 — 2/3 cups almond milk
- 2 tbsp. vegan chocolate chips
- Directions: Begin by mixing your dry ingredients together in a large mixing bowl. Add your flax egg and almond milk and whisk until batter is smooth. Fold in your chocolate chips. Heat a large griddle over medium high heat. Spray your cookie cutter and griddle with cooking spray.
Place your cookie cutter on the griddle and pour enough batter to fill in your cookie cutter. Once your pancake batter begins to bubble, gently lift the cookie cutter up. Once your cookie cutter is off, flip your pancake. Cook for another 2 minutes.
I was surprised how fluffy these bad boys got — the Husband thought we were eating French toast when he sat down to eat!
I totally give you permission to make these any day as well — not just Valentine’s Day.
Because let’s face it, if you’re trying to get someone to love you through food, these pancakes will do it any day of the year.
Unless they don’t like chocolate chips — but that’s a different story for a different day.
I don’t want to talk about it.
Question: Do you try to make food fun on holidays?
