peanut butter pretzel bites

Thanks for still coming back tonight even though I am gross and don’t wash my water bottle. On second thought, after reading your comments – neither do you! I got many questions as to whether or not I am going to start drinking coffee again. I think I’m going to stick with one cup every once in a while since I’ve already gone through the caffeine withdrawal, and it was not pretty at all. I’m actually enjoying my lemon water in the morning! I want each and every one of you who told me this might also be “your problem” to keep me updated! Please email me when you are done experimenting, and I promise to keep everyone updated as well.

Hey, readers!  I’m Liz and I write over in my little corner of cyberspace at Blog is the New Black, where I share recipes and anecdotes about life in the ‘burbs with my witty garbage disposal boyfriend, Lloyd.  Although I am neither a vegetarian nor do I eat gluten-free, I still frequent Chelsey’s blog because she’s adorable and funny.

Today I’m sharing with you one of my favorite desserts (or in my case, snacks!) which also happens to be the most viewed recipe on my site!  I know Chelsey has a soft spot for peanut butter, so this just seemed fitting.

Peanut Butter Pretzel Bites
From Martha Stewart Living
Print this recipe!

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup, plus 1 tbsp confectioners sugar
  • 1 tablespoon room temperature unsalted butter*
  • 1 cup pretzels, crushed*
  • 5 ounces melted milk chocolate*

Directions

  1. Stir together peanut butter, confectioners sugar, unsalted butter, the crushed pretzels.
  2. Roll into 1" balls. Freeze for 30 minutes, or until firm. 
  3. Melt chocolate over low heat. Dip balls into melted milk chocolate, and refrigerate until set.

(*edit to add by Chelsey: You could easily make this recipe gluten free and vegan by using gluten free pretzels, Earth Balance for the butter, and dark chocolate in place of the milk!)

this reminds me of a TJ’s treat I had once: chocolate-covered pb pretzels. Only better because there’s more peanut butter. I like. :)

I love the salty/sweet combo, and pretzels are the perfect match for PB & chocolate. I made Billy some easy homemade PB cups for his birthday and now he requests them all the time. So good - and I love them straight from the freezer.

Those look so good! My husband’s a sucker for anything peanut butter-chocolate. I think a spoonful of peanut butter with chocolate syrup would even make him happy.

My favorite Chocolate and Peanut Butter Combination is Dark Chocolate Cocoa Powder in my oats, with a dollop of Peanut Butter on top! Best thing EVER! :D
