Cinco de Mayo, say what? This date reminded me of a lot of blonde moments today. For one, when I was in high school, I had no idea what Cinco de Mayo was — um, really? If you are in the same boat as me, let me put it out there for you. Cinco = 5. de = of. Mayo = May
For two, yesterday I did NOT get the “May the Fourth be with you” joke. One must get at least eight hours of sleep every night to get jokes like that. Eight hours is a foreign phrase for me lately. Seven hours? Not so much. Six hours? If I’m lucky. Five hours? Now we’re talkin’. I have had something to do every night after work this week, so my schedule has been swamped!
Thankfully after work today, I headed off to a place where I knew I could relax, have fun socializing with others, and work at the same time. Tonight was my third time volunteering at the cafe. My mom and I ate there on Saturday afternoon as real customers, and we both agreed everything was out. of. this. world. delicious.
Let me introduce you to Laurie Sloan, owner of the Vegan Cafe.
Okay, okay — that was a horrible picture of her. It wouldn’t do her justice to put that picture up without a really good one to follow suit.
Much better. Obviously that just goes to show how much fun everyone has when they are at the Vegan Cafe.
side note: To prevent Laurie from never letting me set foot in her cafe again, I swear she is crossing her eyes in that picture. She’s just really good at monkey faces.
There was a lull when I went in today to help out, so Linda and Laurie used that time to put me to work. My dish washing skills were tested out — only because they heard I am so good at doing it at home.
We also prepped some food for the upcoming day tomorrow. I helped with the Kale Salad — which is typically topped with the best avocado dressing ever. see the green bottle? I have a hard time not sitting back and pouring shots of it in my mouth. Oh, Lockport isn’t Vegas? Too bad.
This week Linda also came up with a special for Cinco de Mayo — a taco salad! The salad included raw taco “meat”, guacamole, “sour cream”, and corn chips. I tried both the taco meat and the sour cream, both of which were outstanding. The taco meat was made from a base of sun dried tomatoes and nuts — it was spicy! The sour cream is cashew based, and dare I say I liked it better than regular sour cream.
After putting in my time making smoothies, sweeping, and getting a few orders together, it was already time to go! I scoured the menu trying to decide what I wanted to have for dinner tonight. It was a TOUGH decision! On Saturday, I tried the mock tuna cucumber boats which were fantastic. Today I was feeling carby, so I went with the raw bagel with sunflower dill “cheese” and cucumbers. When I got home I added some sliced tomatoes to the mix. The verdict? I could live off of this for the rest of my life. I even fed a piece to the Husband and he approved! The bagel has a great flavor — almost like a sundried tomato flavor with a hint of garlic. Whatever was in there tasted amazing.
On the side I had a portion of the kale salad (which I drizzled with the dressing after this picture was taken) and the fruit salad (drizzled with cashew sauce).
I’m glad raw/vegan food leaves me feeling light and energized because this girl has a lot of chores to do before bedtime tonight — and we all know 4:30 AM comes very quickly.

And it’s early. Really early.
