WIAW – first of many.

The world is full of acronyms. Abbreviations to make our lives a little bit easier. NASA, PDA, LOL, BRB, PETA.. you get the picture. In my opinion, acronyms are an excuse for people not to say long and complicated words, which in turn makes us ignorant and wondering what in the world those words even mean.

In the world of education, we have even more acronyms. In fact, I think I’m going to come up with acronyms to remember what the acronyms mean. Anyone with me? Sometimes it’s harder to remember what those darn things mean.

However, I’ll gladly add one more acronym to my list: WIAW.

Blogger girl, say what? Oh yes, add this WIAW to your list of important acronyms. I’m finally jumping on the bandwagon – and I am proud to introduce to you my first of many “What I Ate Wednesday” post. Thanks to Peas and Crayons for the great idea!

Peas and Crayons

Breakfast – 6:00 AM

 
In order for me to get into bed on time last night, I ditched the overnight oats idea. Instead, I opted for hot oats this morning. They were fabulous – thick, creamy, and hot – perfect for a May 18th morning when it is still in the 30’s when you wake up. For real spring? Let’s just move right onto summer. I’d gladly appreciate it.

In the bowl:

  • 1/3 cup gluten free oats
  • 1 cup water
  • 1/3 cup coconut milk
  • 1/2 banana, thinly sliced
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla
  • 1 tbsp. vega chocolate shake ‘n go
  • 2 strawberries, thinly sliced
  • cinnamon
  • raisins
  • peanut butter

I followed up my bowl of oats with some cantaloupe.

  
Snack – 10:15 AM

 
A big, ripe, juicy pear. I ate this while cautiously watching a student of mine who fainted (!!!!) during a music performance this morning. It was quite the commotion and had me shook up all day. Thankfully her parents were there, so it made the situation a little better.

Lunch – 11:30 AM

I know I talk a lot about how much I hate lunch, but this one had me lovin’ on lunch time. I had leftover roasted potatoes from dinner last night. I also had a large spinach salad with all the fixings, including some extra roasted eggplant from dinner last night. I topped the salad with some balsamic, nutritional yeast, and hummus.

I topped my roasted potatoes with some Bone Suckin’ Sauce.


What? You don’t carry a jar of barbecue sauce in your lunch bag? That’s just weird.

Snack – 3:15 PM

I had raisins and almonds – and quite frankly, I ate them before I remembered I needed to take a picture. I’m not used to this whole taking pictures of everything I eat thing. Let’s just say they were delicious – and I had been thinking about them since lunchtime. Not because I was hungry after lunch, but because I love the combination of raisins and almonds.

Dinner – 6:45 PM

Any guesses as to what is in the box?


Some food from the Vegan Cafe! I went to volunteer there tonight (to read about the Vegan Cafe, you can do so here) and got some food to go. I got the Cucumber Boats, which are hollowed out cucumbers stuffed with a raw/vegan tuna salad. On the side I had some slaw and fruit salad topped with cashew drizzle.

 
Linda doesn’t mess around – these things are fabulous.

Snack – TBA

I always eat a snack about an hour before I go to bed. It’s usually a bowl of fruit and granola, and I don’t think tonight will be any different. If I don’t eat anything before I go to sleep, I will wake up in the middle of the night hungry!

So there you have it – my WIAW!

Best thing i ate today…raisin bread pudding made my the local arubans. Omg. Heaven on a plate :)

Fruit salad with cashew drizzle!? I’m sooo recreating that.
Banana oatmeal with almond milk was the best thing I ate today. Breakfast is ALWAYS my favorite meal of the day.

I am so glad for acronyms sometimes (SCUBA for one) but I dislike the acronym FML because….really?
LOL, WTF, and OMG are okay with me though. It took me a while to get the latest: TWSS. It’s times like that when I get frustrated and feel sorry for my MOM who still doesn’t know LMAO or any of that.

Yayy, everyone’s climbing aboard the WIAW bandwagon! Loving it. I think being away from the “daily eats” thing for so long has got my interest piqued as to what others have for snacks and stuff :)
The cucumber boats look awesome! What was in the “tuna” salad stuffing? It’s got me curious.

Yummy food, Chelsey! You are so lucky! I have to eat lunch at 11:05… but I guess that’s the price I pay for teaching 2nd graders. First for lunch. (I just can’t wait till 3:00 for them to go to computers.) Happy hump day!!!

Yay for WIAW! I love Wednesdays for this reason alone! Haha!

Those cucumber boats look awesome! I so wish we had places like the Vegan Cafe where I live…eating out would be so much more of a treat instead of “ugh, what can I order that’s relatively healthy?”

I think it’s awesome you took the whole jar of sauce with you to work! I do that all the time with salad dressings/soy sauce/salsa! Haha!

I’m so glad you did a WIAW post and that you put the times in it! I think cantaloupe is my favourite melon..scratch that maybe watermelon haha. Actually it changes all the time, clearly I need to make up my mind. Either way any fruit is delish!

I did my last WIAW last week and uhm… can we say addiction? Yes. Yes we can. Something strangely fascinating about seeing what other people eat.

Best thing I ate today? Breakfasssst. But that’s always the case :) Oats with banana and nut butter are the reason I get out of bed in the morning.

Thanks for the Daily Gourmet tip, I am loving it!
I haven’t eaten yet today but the best thing I ate yesterday was freshly baked bread from the breadmaker! That stuff is gooood. I wonder if you can make gluten free bread in a breadmaker… Hmmm. I might have to experiment.

I love bringing leftovers for lunch - makes lunch at work much less boring and gives me something to look forward to! (Wait…is it sad that I look forward to lunch when I bring something really good?)

Fainting is so scary- the same thing happened to someone I know (an adult) recently- she’s an actor and actually fainted while on stage. Your student probably had her knees locked, huh? Glad her parents were there! Those cucumber boats look amazing!

Roasted veggies on salad = the bomb.com
Raisins and almonds make a delish combination. So do dates and cashews. Ooh, or dried mangoes and cashews. Or dried mangoes and macadamia nuts. Mmm, now you’ve got me craving dried fruit and nuts.
