It’s been seven weeks since I jumped on the WIAW bandwagon?

When someone unlocks the secret as to how in the heck time goes by so fast — please share it with me. I feel like whenever you want time to speed up, it slows down. When you want time to slow down, it speeds up.

Moving on — to bigger and better things!

Lunch — 12:30 pm

Lunch was a hodgepodge of things.

First up — a tofu salad sandwich.

I actually did eat this one — except it was wrapped up in tinfoil. It was enjoyed while I sat on a cooler in a parking lot.

You have to know I’m serious.

Thankfully that parking lot was at a water park where I took my niece and nephew.

Along with it I also ate an apple and an Enjoy Life chocolate chip cookie (no camera was available!)

Snack — 4:00 pm

These bars rock. I got the NRG bars as a special that Daily Gourmet had a few weeks ago — they remind me of Larabars! Their protein bars are delicious and pack 26 grams of protein. Their health bars (above) have 13-14 grams of protein!

Dinner — 6:30 pm

Would I like a quinoa/veggies with my marinara sauce? No thanks.

  • Mexican quinoa (I’m mixing ethnicities here) (x2)
  • Italian sautéed vegetables (onion, zucchini, mushrooms, artichokes, fresh basil)
  • marinara sauce

Yes this is a recycled photo — yes, I eat this just about every night. Apple, raisins, granola, almond milk = best combination ever.

I hope everyone has a great day — I’m off beaching it up with one of my friends in Chicago (and possibly making a pit stop at the Lincoln Park Whole Foods — my favorite one!). I hope you come back later for some fun childhood stories!

You are so right to say that overnight oats NEVEr gets old. Sometimes I try to switch it up.. but then I feel like I’ve missed out on my oats all day :(

I have that snack often too! I love the crunch of the apples, the creaminess of the almond milk, and the chew of the raisins! It really is the perfect combo! Especially with a sprinkle of carob powder or cinnamon!

Seriously, because of your oatmeal pics, I am in LOVE with oatmeal now… It’s REALLY hard to make them as awesome as yours while in Korea, but when I get home, I fully intend on investing in overnight oats, steel cut oats, and all the seeds (except sunflower since I’ve recently discovered THAT allergy) and fruit and nut butters…

The best thing I ate yesterday was the blackberry and black raspberry cobbler I made along with homemade vanilla maple ice cream- YUM!!! Have fun at the beach! I’m totally jealous because we don’t even have a pool around these parts :)

That bar looks good! The best thing I ate yesterday was actually a drink-Metromint water! So refreshing, and it’s just water and mint!!

Haha I was just thinking this morning how it’s already been like 8 weeks since I started doing WIAW… kind of scares me how fast time is going without me even realizing it. Best thing I ate lately wasssss… I guess breakfast this morning - AB&J oats… nothing fancy, but it’s been so long since I’ve had them and it hit the spot just right.

Ah, to wake up to That bowl of oatmeal- must be heaven :)
Ive loved everything Ive eaten today. The tabbouleh salad I had was delicious, and so was the date crumble squares I had this morning!

The best thing I ate yesterday was a wrap consisting of quinoa, daiya chedder, black beans, and spinach.
Your salad - I’ve never thought of using hummus as the dressing, what a good idea.

The best thing I have eaten this week was definitely a homegrown tomato sandwich. Also, last night I made smoked apple chicken sausages with a side of sauteed red onion/apple/seasoned rice wine vinegar/parsley/maple syrup. YUM. Have fun at the beach, and I hope you get to go to Whole Foods! My favorite one that is close to me is in Nashville (two hours away, but totally worth the drive - it’s right next to Trader Joe’s - bonus!).

The best thing I ate yesterday was definitely maple-cinnamon OIAJ! Especially the last few super peanut buttery bites, lol. I just can’t get on the whole overnight oats bandwagon… they’re not thick/sticky enough for me!

Your oats are so pretty! And marinara sauce makes everything good :) Haven’t eat much yet today, so I’d have to go with my own overnight oats, but they definitely were not as appetizing-looking as yours…

ditto on the oats, i eat them every. single. day…lol. well, almost. :) yum, ur day of food looks good..i’m interested in checking out what those protein bars/cookies look like, 26 grams are some good stats! i think the best thing i ate yesterday were my chicken and black bean tacos…can’t ever get enough mexiacn food.

I’ve always wanted to try overnight oats. I just found your video post about it, so i’ll have to check that out :)

The BEST thing I ate yesterday was breakfast: TJ’s bran flakes mixed with Kashi Go Lean Crunch with strawberry banana keifer and a sliced peach.

I am going with yesterday and that would be Rustic Chocolate Chip Banana Oat Cake from Angela at Oh She Glows! Made it for a coworkers birthday and it was so good, the PB Banana glaze is a must too!

I am thoroughly impressed you are able to go from 6:30am - 12:30pm without an in-between snack. I don’t get breaks at work so I’ve been trying to eat a larger first meal so I don’t pass out half way through the morning. I’m going to have to try your breakfast to see how long it holds me over!

It doesn’t always happen - I was just busy with the kids so I had no choice but to not have a snack! I was probably hungry around 11 but we were in the water park!

The best thing I ate today was the banana whipped oats that you posted a while ago! Mmmmm…they are so yummy. And, I bought some cashew butter today. Boy, is that good. Peanut Butter is still my fave but cashew butter is also yummy ;)

And those NRG bars? They look awesome! I still love Larabars, but lately their intense sweetness and low protein just doesn’t do anything for me :( I’ll have to keep an eye out for the NRG ones.

I love your nighttime cereal-it looks great! I had one last night too only with strawberries, bananas and almonds with spelt flakes. My favorite meal today was lunch-spelt tortilla with bits of eggplant burger, avocado, lettuce and hummus. Mmm.
