Did you know that my CSA doesn’t really give a rip that my fridge is still overflowing with produce?
Apparently we have been slacking in the vegetable eating department as of late, because when I went to go fill up my fridge with the new box of veggies I brought home today, there was really nowhere to put everything.
And if I am perfectly honest with you, I now have seven squashii sitting on my counter. Seven! That’s a step down from the 20392309 I had last week, but really? I need to go to Squash Hoarders Anonymous.
I keep saying I am saving them for “the perfect meal” — um, how about I eat them for A meal and make that the perfect one? This is getting a bit out of hand.
Despite the fact that my fridge didn’t have room for any produce today, that doesn’t mean I am not accepting the challenge of eating up a lot of new delicious veggies! We’re going to eat through this stuff even if it kills us! —> yeah, I don’t think it will either.
The box.
Red Leaf Lettuce. Golden Beets. Mixed Baby Greens.
Pie Pumpkin. Buttercup Squash (yesss!!!!).
Green Cabbage. Apples.
I know you have ideas on what to do with this food. So do I, but sharing is caring, and I value your opinion — as you very well know by not making the soup any of you requested earlier this week.

Oooo those golden beets look good! And I tried a buttercup squash a couple weeks back, tastes a lot like a butternut squash! Shocking, I know…

When we had our CSA box…we had that FEAST or famine thing going on. Some days we had almost nothing, then other times we had squash coming out of our ears
Hope you find a way to use it all up, comfortably, rather than scramble-style which is what used to happen to me…so for now we’re on a CSA break
There is something rewarding about preparing your own squash and veggies. Of course trader joe’s sells them all in perfect little baggies precut but I just think we all deserve a little pat on the back for doing it the ol’ fashioned way

Smother those apples with peanut butter and snack your way to pure joy. As a person who doesn’t believe in cooked fruit, that’s the route I’d go.
Also, buttercup squash? I need to work on my squash awareness, clearly.
Buttercup squash is a little sweeter than acorn (like butternut) - it’s so good.
i love golden beets… or any colored beats for that matter. one of my favorite salads is mixed greens topped with roasted beets, goat cheese, macadamia nuts, and a drizzle of balsamic reduction. simple + delicious.
You can never have enough veggies! I would totally eat through allll of that in a short period of time ;D

I’m so jealous of your box! Buttercup squash? I’ve never had one of those before! Can’t wait to see what you come up with with all your goodies!
I just told one of my CSAs (yeah we have TWO) that if he saw a good deal on squash that I’d take up to 20. I love squash. We store it in the basement near our dehimidfier and it lasts for a few weeks. I usually bake 3-4 at a time and puree them for freezing. Then, I have it available all year for soup, muffins, pancakes etc.

Too much produce is NEVER a problem!
You could make a beet and chard risotto, vegan cabbage rolls, and that pumpkin is just waiting to be made into some sort of pumpkin pie!

You could totally make stuffed squash with squash, apple, rasins, quinoi, and pecans
