Did you know the likelihood of me making a dish twice is slim to none?

And do you know what a shame that is?


It’s true – I rarely make the same thing twice***. Once again, I’m doing it for you. You wouldn’t like it if I posted the same recipe once a week, now would you? I didn’t think so. Once again, the Husband loses out because I won’t make a meal he has requested for over a year. #strikeone

***This is a lie – I am really good at making bowls of granola, oatmeal, salads, and sweet potatoes. Does eating chocolate count as “making something”?

There’s just too many wonderful dishes in the world to make – stir fries, baked goods, muffins, cookies, cakes, fried green tomatoes, gluten free bagels (work in progress), anything with pumpkin, and maybe, just maybe, one day I’ll make a red velvet cake just because I can. And then I’ll become my mother’s favorite as she tells me how much she loves my cake. It. Will. Happen. I have no remorse about winning people over with food.


The thing is, I don’t ask the Husband what he wants for dinner – ever. I got sick of him saying “I don’t know” or “spaghetti” that I decided to take matters into my own hands. My own hands meant “make food for the blog and crossmyfingersandpraytogodthatyoulikeit” – and yes, I say that all in one breath so he isn’t quite sure what I say. So when he asks for a specific meal, by name, for over a year, I think it’s time I break down and just make him his food.

It’s funny because usually I would say, “What? You want me to make you fried cheese with a side of bacon grease? No way! Go marry her for crying out loud!!!” But when he requests something like squash filled to the brim with my homemade vegetable chili and it takes me a year to cave, that just makes me mean.

Last year I made squash bowl chili, or as we like to call it around here – Squashili. The one thing you don’t want to do is pronounce it wrong – because then that would be tragic. It’s kind of like in A Christmas Story (only 1 months and 14 days until I get to watch it!) when the dad gets his lamp leg in the mail and can’t pronounce the word fragile - “fra-gee-lay”. And if you’re wondering (which I don’t know why you would be), but I got my dad a leg lamp for Christmas last year. I put it in a big box. I wrote “fragile” all over it. I’m pretty much the best daughter in the world.

But anyways, Squashili is pronounced - “squa-sheeeee-leee”. Why? Because we can. And we will. As we eat our squashili. And wonder why we don’t have many friends.


I’m not posting the recipe again – for three reasons. 1) You can click here, 2) I’m lazy, 3) use your common sense and fill up a roasted squash with your favorite chili.

Simple. Delicious. Lovely.

And now my husband loves me again because I made what he requested. Win-win.

I make the same 10 things over and over. They work, they’re easy, everyone likes them. I stopped blogging about them 18 mos ago :) So now, I’m just left with new desserts. lol

There are the few I use over and over again - like mexican night, spaghetti night, etc, but for the most part I try to switch it up!

This is GENIUS! It totally reminds me of something I created last year (except this is probably better!) I had some leftovers from something the kiddos I worked with had “cooked”: a smashed pinto bean and shredded cheese salsa. I bulked it up and created a large portion size (and distributed the HUGE quantities of cheese into a few more servings :D ) by adding more beans, some extra delicious chipotle salsa, and a cubed butternut squash. WHOA it’s so great. And so FILLING! Anyway. Tangent. I’ll try yours next!

When it comes to recipes, I don’t often make the same one twice either. There are just too many that I want to try, so I don’t want to “waste” a meal making something again. :P

Yum! I love how this is a meal all in one! I just used my acorn squash on Tuesday but maybe I can do this will my butternut squash from this weeks CSA.

P.S. I think we signed up for the same CSA. Genesis growers right?
It’s my first time with them and so far I LOVE everything I’ve been getting!

Oh I am so the opposite. I get stuck in “food ruts” constantly because I’ll find a dish I like and want to eat it every single night for dinner. My poor husband ;) Luckily, he knows to come up with new dishes if he wants something else.

Genius! Love itttttt! Jeremy and I love chili, but I always feel like chili by itself isn’t quite a complete meal. And as much as I love to eat it with a fresh baguette, that’s not really helping matters. So acorn squash it is! Thanks.

My husband complains about the same thing. I really hate to make most things more than once also. Or if I do I have to change it in some way. This looks great. Maybe my husband would actually eat acorn squash if it was covered in chili.

YUM! So glad I bought an acorn squash this week :) I had to laugh when you said you husband asks for spaghetti! That’s exactly what my hubby says when I ask him what I should make for dinner. I’m like you, I don’t like to make the same thing twice…except when it comes to oatmeal!

This is brilliant!
And, truth be told, I think a lot of men would kill to have such unique and delicious meals placed before them on a regular basis. Despite what they say, good food is undeniably more satisfying than fried grease and beer. :)
