what day is it again?

November 23, 2011

I hope you have the day off, I really really do. That way I won’t feel quite so bad when I tell you I’m lounging around in my pajamas with my hair in a ball at the top of my head and plan on staying this way for the remainder of the morning.

Whenever the Wednesday before Thanksgiving comes around, I am always so grateful for the day off. While two evening conference sessions don’t feel like it at the time, they are totally worth it. Otherwise, I would have to be rushing around trying to make all my Thanksgiving food the day of — no thank you!

Although yesterday was Tuesday, it was really like a Friday, but it’s my Wednesday eats. Talk about confusing. What day is it again?

Breakfast — 5:45 AM

November 15, 2011 001
no. description. necessary.

Lunch — 11:30 AM

As disgusting as lunch looked, it was delicious. Squash and kale soup (made with the ginormous squash I received last week) along with Greek yogurt with protein powder mixed in. After I was done eating that, I needed some crunch — along came an apple.

November 22, 2011 007
And then I really wished I had brought some bread or crackers. #fail

Snack — 3:30 PM

I thought about my snack all afternoon. I don’t know why — some days I’m not hungry at all during the afternoon, and other afternoons it takes all I have in me not to leave my class to go eat my snack early (kidding, kind of…).

June 8, 2011 023-1

Dinner — 6:15 PM

Can we first talk about how long it took me to get home from the chiropractor today? Seriously, people are driving crazy right now — crazy meaning they don’t know how to drive. I don’t even want to know what happens when it starts snowing. It will be painful. Needless to say, I had about 2 seconds to make dinner before my stomach ate itself.

November 22, 2011 008
And then I forgot to take a picture of it — whoops.

And then during my Thanksgiving pre-cooking extravaganza, I ate one of these when they were piping hot out of the oven. Holy moly. I want to eat these for the rest of my life.

Snack — 8:30 PM

A pumpkin protein muffin topped with chocolate chips (oh yes), apples, raisins, Greek yogurt, and peanut butter.

November 22, 2011 010

No better way to end the day.

And I promise if you come back later I will have quite a Thanksgiving dessert recipe for those of you who are last minute bakers!

Question: Are you working a shortened week this week? Did you have today off as well as actual Thanksgiving?

I made today a day off! Haha no worries, I have a friend taking notes for me. How did you end up cooking that giant squash??

I quartered it and cooked it “meat” side down for about 90 minutes.

Squash and Kale soup sounds simply delicious. And such a vibrant colour! Definitely a perfect comfort food for a PJs-kinda-day. :)

The gym is closed today through Friday, so my classes were cancelled. It’s ok…we’re going to take a few days of rest and go back at it with Bootcamp on Saturday morning.

Sadly, I am here at the office right now. Luckily, I will get to leave early. Woohoo! I gotta pick up Gramps from the airport.

I’m bummed that my husband doesn’t have today off, but I guess I just have to be thankful for the next four! Can’t wait to see another recipe. I’m still deciding what to bring.

Hey, I forgot to bring bread with lunch yesterday, too! Was very unhappy without it.

I have only Thanksgiving off. Fortunately, my normal schedule has me only working 1/2 day on Friday, so I will still have 1/2 day on Friday!

My husband already left work today and just called me to ask “Are you wearing your boots?” He wants to wear my rain/barn Muck boots to go do a digging project in the actual-muck that is our yard.

Love all your eats. I know what you mean about afternoon hunger. I have to have something on hand after I get done teaching to grab once the kiddos are gone somedays, others I can wait.

We had a 1pm dismissal today, though it felt strange since tomorrow is thanksgiving. When I was younger (and also all my college years) we went until Monday, maybe tuesday and then we were done.

I didn’t get a day off today, but I’m home now from work so it’s all good! A 4-day weekend is better than a 2-day that’s for sure!

Have a wonderful Thanksgiving Chelsey!

Well, I’m in Canada so I’ll answer it based on our Thanksgiving holiday in early October - but no! I don’t get the day off before Thanksgiving. That might be because our Thanksgiving falls on a Monday. Hmm.
