It was brought to my attention the other day that nowhere on this blog is there a recipe for kale chips.
That’s got to change, people.
And don’t mind these pictures — this batch came out a little bit burnt. I was in shock when the timer started going off and I may or may not have ignored them for three minutes, letting them get a little too crispy. Do as I say, not as I do. Sound familiar?
I have to tell you — I used to be very skeptical of kale. It looked like a garnish many restaurants put on the side of your dish just to fill in the extra white space they aren’t filling your plate with. And speaking of that, maybe restaurants should just get smaller plates — because in reality, those portion sizes are stinkin’ huge. Not that I am complaining about getting large portions of course, you know, when I actually spread them out over the course of two meals. It’s when I scarf all of my food down like I’ve only eaten kale chips for the last three days when I feel like portions should be smaller.

So anyways, it wasn’t until last winter when I heard Trader Joe’s was selling kale chopped and trimmed in a easy plastic bag did I ever even try to cook with the green stuff. And if you are a packaged greens kind of person, get the bag of kale from Trader Joe’s. Seriously. It’s the best thing since sliced bread. Or peanut butter. You decide.
My lovely CSA has been giving me a butt load of kale this winter. Yes, you read that right — a butt load. Please excuse my prepubescent way of describing a term of measurement. Let’s remember I hang out with 10 year olds every day for seven hours. That’s at least 35 hours a week.
I almost started this next sentence with “so anyways” and then I remember that a) I say it too much and b) my mom told me it’s supposed to be “anyway” not “anyways”. I’m just going to forgo what I had originally planned on saying.
Kale chips are incredibly easy to make. Massage with oil, add your spices, bake in the oven, and voila! Crispy little chips of goodness ready to be devoured.
Get. In. My. Mouth. (words I also say when word vomit comes out much too quickly on many occasions)
Simple Oven Baked Kale Chips
Serves: 1-2
Difficulty: Easy
Prep Time: <5 minutes
Cook Time: 12-13 minutes
- 1 bunch kale, stems trimmed and chopped into 1-2 inch pieces
- 1 tbsp. olive oil
- 1 tbsp. water
- 3 tbsp. nutritional yeast
- 2 tsp. tamari (or soy sauce)
- salt, pepper, garlic powder to taste
Instructions
- Begin by rinsing and trimming your kale into bite sized pieces.
- In a large bowl, mix your kale with 1 tbsp. olive oil, 1 tbsp. water, and 2 tsp. tamari. Massage the kale until all has been coated by the marinade.
- Add the nutritional yeast and spices and toss to coat.
- Spread the kale in a single layer on a baking sheet. Bake in a 375 degree for 12-13 minutes. Watch closely in the last few minutes as they can burn easily.
- Allow to cool for a few minutes. Enjoy!

Kale chips are the bees knees…especially with a side of Ketchup
These were dipped in a buttload (seriously, why do I keep using that phrase?) of ketchup. I didn’t want to gross anyone out.

I have to ask…do these taste like kale? I keep hearing how delicious this recipe is all over the blog world, but from what I know, kale has a very strong flavor-is that masked when it’s cooked?
The bitterness of kale usually gets “rubbed out” when you massage it. And when you cook it, I think it masks it a lot!

I definitely burned mine the two times I tried to make them - I think the leaves were too thin and curled. The pre-bagged leaves sound much easier!
Try lowering the oven heat and letting them cook for a little bit longer, This way it will take a while for them to crisp up.
Kale chips were one of those remarkable discoveries I stumbled upon a few years ago. Kind of like overnight oats. The world is just better with them.

I LOVED when they get all nice and crunchy…and little burnt is actually fine by me too. Give me some crunch, and I’ll take a little black! I want to try one with nutritional yeast VERY soon. I’m only at balsamic vinegar. I’d say I’m good to go to branch out!

YES! In fact, the best kale chips are made in a dehydrator, but I know most people don’t have access to one, so I wanted to do something that would be easy for all to make.

I am so glad that I bought nutritional yeast a few weeks ago, now all I need it the kale to make these beauties. I’ve never had a kale chip but I am itching to give it a go!

This is almost exactly how I make my kale chips too.
They’re so, so good. I can easily eat an entire head of kale in one sitting. Might just be my favorite food!
My sister will be happy to see that this recipe calls for the oven to be above the normal low temperature with the oven door propped open. She always says that if you cook it higher for a shorter amount of time you get to eat them faster and they work just the same. I’m definitely going to pass this recipe on to her!

Prechopped kale? I’m jealous! The only thing that prevents me from eating kale chips every single day is the fact that I hate having to chop, wash and dry it first.
Anyone have any recommendations on storing kale chips? I made a perfect batch last month, ate a few and put the rest in an airtight container only to come back to them being limp and chewy? How can I keep them crisp?

Eat them all at once. At least that’s what I do.
Although if you make them in a dehydrator, they’ll stay longer.
Kale chips are by far my favorite way to eat kale. Even my 5 year-old will eat them, and ask for more! We sort of OD’d on kale this summer when we grew a buttload in our garden, so it’s been awhile since I’ve made chips. Must remedy that.

I tried making them once, but they tasted so bitter! I massaged them with oil, added my garlic powder, salt and pepper, but after the first taste of the seasonings bitter kale was all that was left. I’m always tempted by them though, they look so good.
That’s so sad! Were the stems still on them? Sometimes parts of the stems can make kale taste bitter.
Oh, you know what? That’s entirely possible! I don’t know if I took the stems off or not.

i use macadamia nut oil instead of olive oil for mine. it gives the kale chip a fabulously nutty taste!
and, because i’m a ketchup queen, i dip my chips in ketchup.

Love dehydrator style kale chips. They are honestly THE BEST.
