back to the basics: a filling salad

I wouldn’t fit the stereotypical mold of a “healthy living blogger” if I told you I don’t enjoy salads. However, lucky for you (and me!), I absolutely love salads.

Yes, I eat one almost every day.

Yes, it fits into a Tupperware so large it could feed a family of four.

Yes it probably was the best thing I ate all day.

Truth be told, salads make me feel good — inside and out. They fill me up, make me feel like I am adding years to my life with every bite, and well, they’re just awesome. Salads usually allow me to fit in the majority of my 5-9 servings of vegetables a day as well. In order to create a filling salad that can be considered a full meal, I need to make sure I also have healthy fats and a protein source somewhere in the ix.

I create my salads with whatever ingredients I have in my fridge and pantry, so they are never exactly the same. However, I always follow the same steps to reach a salad that will help tide me over until my next meal or snack.

1. Choose your base. When I’m talking about salads, I usually mean a base that is something green. My favorites include the following:

  • spinach
  • romaine (my all time favorite!0
  • kale
  • spring mix

2. Top with other vegetables. The vegetables I choose are always a little bit different, and very well depend on what I have in my fridge at the moment. I have really been enjoying cold roasted vegetables on top of my salads. My absolute favorite roasted vegetable at the moment to top my salad with is roasted sweet potatoes. Honestly, give it a try — they are the perfect creaminess to break up the crunchy bits of the salad. I can’t get enough!

3. Add a protein source.

  • tofu
  • beans
  • egg

4. Add a healthy fat.

  • avocado/guacamole
  • nuts
  • sunflower seeds
  • olive oil (also as a dressing!)

5. Dress it up! I tend to stay away from bottled dressings, but there are some fairly good choices out on the market. I’ve seen some great ones at Trader Joe’s and Whole Foods. In reality, I’m just cheap, and I can’t get enough of my hummus as my salad dressing!

  • balsamic & olive oil
  • salsa
  • hummus
  • nutritional yeast

I have found when I eat giant salads that I must pair it up with a whole grain of some sort. If I don’t, I end up with quite a stomachache from the huge amount of fiber I have just eaten! Everyone is different of course, but my stomach is happier with some balance!

Oh I LOVE salads! I usually eat at least one a day as well! I think I could eat one everyday for lunch and dinner! I love my breakfast oatmeal and omelets too much to sub a salad in there too! ha

i’m a huge salad lover… i’m in heaven when i go to a place like jason’s deli or sweet tomatoes with their all-you-can-eat salad bars! lately on my own salads, i’ve been loving a homemade blackbean or chickpea veggie burger with a sliced tomato and avocado in there. filling and delicious! i also love using salsa as my “dressing” when i make more of a mexican inspired salad. i could eat salsa by the spoonful! ;)

i have been adding roasted sweet potatos to my salads too!! so yummy.. especially with goat cheese! i also been adding veggie burger crumbles to.

on the other side i will add black beans, corn, and salsa to make a mexican salad!!!

I have too many favourite salad combinations to choose just one! But the one that comes to my mind right now is baby spinach topped with roasted acorn squash, parsnips, broccoli, and carrots plus dried figs, toasted almonds, and a homemade honey balsamic dressing.

And I totally agree about needing a grain on the side of my salads - I keep a multigrain baguette in my freezer at all times for that purpose! :D

I love your layers/tips. Must have tons of dressing (for me that’s a fat source b/c I use avo as my dressing many times, or peanut sauce or mayo/greek yogurt as a dressing with spices) and then it has to have chunky, big, hearty, crunchy veggies. I cannot handle salads that don’t have tons of crunch!

I love roasted broccoli as my salad base! But then, maybe it’s not really a salad - more of a veggie bowl? Either way, I love big bowls of greens too. :)

I’m glad you said you like to pair it with a whole grain source. Super way to balance it and get in extra nutrients (I suggest adding coconut oil + jam to the grain).

I find that warm sweet potato chunks + avocado are nice in a salad (along with sardines and eggs….altogether..I’m weird?).

I eat oatmeal/egg whites for b’fast and salads for lunch and dinner. My salads are very similar to yours, but my fav additions are beans and egg whites. My homemade BBQ sauce is my go-to dressing, but I can totally go w/o dressing. I eat a sweet potato on the side w/ my salad daily for lunch. I cannot believe I’ve never thought to toss that baby in the salad!

Awesome post. I love mixing up salads in all sorts of ways as well. However, I’m not as good as you about eating them all the time, but I’m working on it! Question- what kind of wheat grains do you eat on the side? I think I have a similar issue, which is why sometimes I avoid salad even though I know it’s the healthier choice.

I have been eating a salad of bibb lettuce, carrots, cucumbers, avocado, black beans, chipotle hummus, and salsa lately- SO yummy and so filling!

Any other crunchy options you can think of to add? I crave croutons-but I want a healthier alternative or just something different!

romaine is my fave salad base but sometimes i like to add arugula or spinach. i also love to mix sweet and savory - a good combo: strawberries, dried cranberries, walnuts, red onion and hard boiled eggs all in balsamic. yummy!

I swear, salads are the one food that I’ll never get sick of.
There are so many combinations- getting bored with them is impossible!
Mixed baby greens/spinach or kale are my favorite salad bases, but I really don’t discriminate when it comes to lettuces. (Except I’m not a fan of iceberg, at all!)

I love salads for lunch and now I’m so glad I brought one for lunch! I’ve topped mine with a homemade veggie taco burger, green beans, and grilled squash…dressed with ketchup! Simple yet delicious!

Oh I love salads too! I ate unhealthy crap all weekend and finally had a salad after 3 days of no greens. It was so delicious! I can’t wait to have another for lunch! In the winter, I like to roast any and every veggie imaginable to put on my greens and dress with something a little more heavy like hummus. In the summer, I love garden fresh squash, zucchini, tomatoes, and cucumbers dressed with salsa or a light vinaigrette.

I love the giant Tupperware bowl! I actually use these Glad square bowls as my salad bowls because they could probably feed an entire family. I love my salads and I love them BIG! I also love hummus as a dressing. I actually just recently started to do that because I absolutely hate vinaigrettes on veggie salads (for some reason I don’t mind them in a pasta or bean salad).

Chicken and mango salad is great in summer! Or a huge green salad with leftover sliced steak and my mom’s salad dressing (it’s addictive!). Loved the tutorial….never tried nutritional yeast as a topper but might give it a go

I was starting to think I was the only person who could feed a family of four with my salads! I love to start with Kale and Romaine, then add whatever else I have veggie wise. Always cucumber, onion, sweet peppers, sweet peas and tomato. Lately I’ve been adding blueberries to the top and sometimes some hummus and salsa too!
