So, uh… this is where I lose all credibility on this blog. This quinoa was supposed to be a granola bar.
On Saturday morning, I was all excited to think up a higher in protein granola bar since my muscles are all jacked and out of control (humor me). I went to work in the kitchen, thinking about my quinoa granola I have made in the past. I’ve made the granola, so why not the bars - Right?
Wrong.
I stuck these babies in the oven for 20 minutes, took them out, and they crumbled. No big deal, I thought to myself — I can just cook them for longer on a higher heat. That’ll do the trick. Uh, not so much.
I finally retrieved these “bars” from the oven, took a spoonful in delight, and declared them a breakfast item to be eaten with milk or yogurt. You see, I think I need a lesson in Baking 101 because baking a treat without any sort of binder will result in quinoa that falls apart instead of staying together. I seriously thought nothing of not using any sort of flax egg or real egg or sticky sweetener to keep these bad boys from crumbling under a slight (okay ravenous and not so gentle) touch.
Lucky for you, though, is the fact that this quinoa will take you 25 minutes less to make than it took me. Because in reality, you don’t really need to go through the extra step of sticking it in the oven for it to do nothing at all. I’m saving you all a big old waterworks fest on the floor of your kitchen when you figured out your recipe kindasortabutnotreally failed.
And if you’re looking for peanut flour for this recipe, you can find it all in my pantry when I freaked out last year that Trader Joe’s was discontinuing the good stuff. I’m ridiculous — and you can just substitute it with your favorite protein powder instead.
Peanut Butter Cacao Quinoa
Serves: 4
Difficulty: Easy
Prep Time: 0 minutes
Cook Time: 15-20 minutes
- 1 cup quinoa, dry
- 1 cup water
- 1 cup light coconut milk (or your milk of choice)
- 1/2 tsp. cinnamon
- 1 tsp. vanilla extract
- 2 tbsp. agave nectar (or sweetener of choice)
- 1/3 cup peanut flour
- 1/4 cup cacao nibs
Directions: In a medium sized saucepan, bring 1 cup quinoa, 1 cup water, and 1 cup coconut milk to a rapid boil. Once the liquid is boiling, add vanilla, cinnamon, and agave. Reduce the heat to low and cover. Cook for approximately 15-20 minutes, or until the majority of the liquid has been absorbed. When the quinoa has some liquid left, add the peanut flour and stir well until all ingredients are mixed. (If you waited too long to add the peanut flour and the quinoa seems too dry, just add a little more liquid!) When quinoa is fully cooked, add the cacao nibs and stir.
Enjoy in almond milk or with your favorite fruit and yogurt!
Don’t forget to drizzle this with even more peanut butter. The last thing I would want to do is make my peanut butter feel left out of any breakfast or snack I consume.
I’ve been eating this as a snack, as a lunch, as a spoonful from the fridge as I am cooking dinner — you know, all the good times to sneak a bite.
I don’t even miss those darn granola bars I dreamed of.

You had me at peanut butter! Okay this looks way better than a granola bar- I’m a volume eater and chances are a serving of this will not be gobbled down in 3 bites!

This seriously sounds amazing! Almost every single time I try to make granola bars, they fall apart. The good thing is that it usually turns into some fantastic granola. I’m still dying to use quinoa for granola so I think I’ll try this one.

Sometimes kitchen mistakes can for sure make the best recipes! I can’t tell you how many times a baked good has become a trifle by the time I am done with it..
I once had the same problem with my granola bars not sticking together. But my failure didn’t result in this yummy breakfast. No fair!

I think so! You might have to let it cook a little while longer since the peanut flour absorbs more liquid!

ok…so stone me for asking, but are cacao chips just tiny chocolate chips? how are they different?
cacao nibs are from cacao beans - when cacao beans are processed they make cocoa/chocolate!
I see it with walnuts, can’t stand peanuts. But I love quinoa. First time I made it I ate quinoa all just because it was soooo cute the plate. When my friends asked me how it tastes, I told them it was very cute!

Sweet! I have the better portion of a can of coconut milk sitting in the fridge waiting for a use - gotta try this! AND I just bought some Teddie’s pb the other day when the grocery store didn’t have my regular go-to pb. Thanks for mentioning it here - it is SO good! Do you need to refrigerate it after opening?

Hey I don’t know about you, but I LOVE new breakfast recipes! And I think the best ideas come from cooking failures - so I say congrats on this cereal! I bought a box of chocolate quinoa cereal from the supermarket and it’s fabulous so hopefully this is like that but homemade!
Sometimes it seems like the best recipes come from mistakes! I really need to switch up my breakfasts grains so I’ll have to give this a try! I may try it with chocolate protein powder.

Sounds EXACTLY like the first (and only) time I tried to make a granola bar. My product ended up more charred and less edible. Def trying yours!
This is the second time I have seen someone add peanut butter to Quinoa….:) I can’t wait to make this. I know that the peanut flour probably makes the recipe, but is there another type that you can use? I don’t have any PB flour at this time….:)
