I feel like this week is whizzing by at lightning speed! Granted this week is a relatively short week for me since we don’t have school on Friday (Good Friday). So even though today is Wednesday, it’s really like Thursday. Win, Win!
Remember how I said my appetite was weird last week? It still is. I have had like no appetite lately, but that is definitely not stopping me from eating.
Jen has a new challenge for WIAW this month of April – serve up an extra cup of veggies! As the weather gets warmer, I am all about this!
Breakfast – 6:00 AM
All I have wanted lately is chocolate – and then some more chocolate. I do not know what is up with me, but if I could just eat sugar for all my meals, I’d be okay with it (obviously I would not truly do that!).
Oatmeal yesterday was:
- 1/3 cup oats
- 1/2 banana
- chia seeds
- egg whites
- 1 tbsp. sun warrior chocolate
- coconut
- cinnamon
- cocoa goodness LOVE
- salted vanilla almond butter (made in my kitchen)
Snack – 8:15 AM
A co-worker let me try these snacks she bought from Costco the other day – they were these nut cluster snacks and they were to die for. I must buy a pack the next time I go there!
The mornings (and afternoons!) have been flying by this week – my kids have been cracking me up. They are incredibly obsessed with The Hunger Games, and most of them have read the books and saw the movie over Spring Break. We had a raffle today in the fifth grade which all of them kept saying “May the odds be forever in your favor”, and the other day when I asked for a volunteer to come up to the board, one of my boys stood up and raised his hand while saying, “I volunteer! I volunteer as tribute!”.
They definitely keep me laughing.
Lunch – 11:30 AM
Um, so this wasn’t really my lunch. But, it was kind of similar! I left home today and realized I never took a picture of my lunch, but I figured I had a picture of a salad and potato somewhere on this blog (go figure). My lunch was really a salad with tofu and roasted potato wedges. Ketchup, obviously.
And an Adora Dark Chocolate Disk for building my bones.
Snack – 3:30 PM
They’ve made a comeback.
Dinner – 6:00 PM
Dinner was delicious and only took about 20 minutes to get onto the table. Interested in the recipe?
Dinner was followed up by a Purely Elizabeth cookie and a piece of chocolate. Please don’t be fooled – I broke this piece of cookie off of the whole cookie I ate. I just wasn’t quick enough with the camera.
Granola. The usual. I’m a creature of habit.

Happy ‘Thursday’/Wednesday! Hooray for Good Friday off! (me too!) …..Easter is my FAVORITE so I am totally loving this week! Except for the state testing again. That is slowly killing me and my kiddos. But, after this week- NO MORE TESTING, for the state that is. Woooo! Celebration time, just in time for Easter!

I love that the kids are quoting the Hunger Games! I saw it this weekend but just keep wanting to go back! By the way, I think Titanic in 3D is coming out soon… And I think we need a guilty pleasure trip to go see it. Just a thought. Mostly I just look really good in those glasses… not.

Am I getting old or does 5th grade seem young to read the Hunger Games?! Probably getting old…
Some of them are definitely not mature enough, but most are - think about all of the different kinds of violence they are constantly exposed to with video games and stuff! As long as most of them realize it’s a “fantasy” book and it would NOT happen in real life, they’re okay.

And I love the Hunger Games references your kids are making. I was telling Will the other day that they’re probably going to be building a “Hunger Games world” in Islands of Adventure here in Orlando (comparable to Harry Potter world), but then I realized that maybe the theme wouldn’t fly with the parents. I can only imagine what kinds of rides that would mean…

Omg your students… that is hysterical! I am so surprised at the wide age range these books appeal to. I can’t imagine reading something so dark in 5th grade but then again maybe I would have. This post makes me feel better and more encouraged to eat 5-6 times a day. I forget that it’s really okay, especially when you’re eating nutrient dense, plant-based, and healthy!
That breakfast oatmeal looks to die for also. I just bought chia and hemp seeds for the first time and am so excited to start incorporating them into my diet.
Oh girl, you don’t want to be around me if I don’t eat every few hours! I love eating so many times a day!

I know exactly what nut clusters you’re talking about from Costco. My parents had a bag of them in their pantry last time I went home to visit. Let’s just say, they no longer do…haha!
oh god…you should see my “bedtime snack” EVERY night: 3/4 cup fruit, 1 cup yogurt + granola + nuts , 1.5 ounces of dark chocolate.
And I’m sedentary, except for a 30 minute stress-relieving walk.
