sunday funday

September 10, 2012

I’m going to warn you ahead of time that this post is going to be a little all over the place. Mainly because that’s where my brain is right now – a little all over the place. Yesterday was a good day. It was basically the epitome of a Sunday in this house.Charlie let me sleep until 6:30 (which NEVER happens by the way), so when I got up, I was ready to start my day with some breakfast.

The past couple of mornings have been nice and cool, and on Saturday I picked up a large can of pumpkin… you know what that means, don’t you?

Pumpkin Pancakes! I try to hold out every year until it’s “really” fall, but I just can’t do it. Pumpkin is officially being craved, and I’m okay with it. For this recipe, I used my Brown Rice Flour Pancake recipe, halved it, and then instead of the apple sauce, I used pumpkin!

No, I didn’t share them with anyone. They were all mine. #noshame

Then, on the way to church, I decided I neeeeded a coffee. Not because I was tired, but because I hadn’t had coffee in over two weeks - it’d been too long. I got my usual iced coffee with soy, but added one pump of pumpkin spice to it. It was perfect –not too sweet, and just “pumpkiny” enough.

(it was hard to take this picture while the husband was driving)

After church, the Husband was more than elated that my mom agreed to go to Trader Joe’s with me which meant he didn’t have to go.Who doesn’t like grocery shopping? That’s just weird. Somehow these ended up in my cart….

And they are already ruining my life. No, I’m not dramatic at all.

The rest of the afternoon was spent sitting on the couch watching the Bears whoop the Colts back into Indy. Oh, I folded laundry too. One of my favorite activities – not.

A random lunch of avocado slices sprinkled with sea salt, carrots with hummus, and a sweet potato were consumed – as if I needed more orange foods in my life.

After the game, I got my booty off the couch, walked to the gym and did a weights session. I can no longer use my arms very well. I guess that means I did a good job.

On Friday I forgot to announce the winner of the coconut oil giveaway, so the winner is… #32, Christina!! Congrats girl! Email me your contact information so I can forward it on to Tropical Traditions!

Another random fact – for those of you who asked about Kathleen on Friday, she’s doing well and the bump is certainly growing. She’s planning on being back in the blog world fairly soon!

Have a great Monday!

Question: How did you spend your Sunday?

I had a Sunday Funday too! Spent most of it resting and napping, but folded laundry as well (I think we share mutual dislike for this!), painted my nails (for the first time in a decade or so!), tried a new food (figs, love them!), and met up with friends for a quiet evening at Starbucks. It was perfect for getting me in the mood for the start of class and a 6:30 shift today. :)
Ps. Going to be making those pancakes STAT!! My belly is longing for them!

That is an incredible looking sweet potato, I would of had to douse it in almond butter! Those almonds would also be a problem if I could get my hands on them!

I’ve actually never done the sweet potato & AB combo before!!

I love that the pumpkin action is back. I spent my Sunday trying to stay away from the house. Now that it’s Football season, the husband and I try not to see each other on Sundays. It’s for the best, really. :)

The pumpkin has officially been busted out in my house too, I had oatmeal with it added a few mornings ago… And the trend won’t stop for sometime now :)

Not a bad little Sunday. I too folded laundry (what fun!) and cooked some amazing jerk turkey burgers with roast Brussels sprouts. Mmmmm… sprouts!

I’m going to have to whip out some pumpkin soon! Don’t know how I’ve waited so long…… Wooo-Hoo for the Bears winning!
We went to church, then drove 40 miles one way to buy groceries, came home, watched FOOTBALL (wooooo for a 49′ers win!!) and did a few things around the house.
……This girl is not a fan of folding laundry either! BOOOOOOO! I found that I find it much less awful once I cleaned off a space next to the dryer and I fold it while I take it out of the dryer and put it in stacks of rooms for the house and then put it away as I go. That way it doesn’t get all wrinkly and it never sits in a basket in my living room waiting to be folded or put away (for days!). About 10 minutes after the buzzer goes off- it’s put away! Best.thing.ever.

I need to try your pumpkin version of those pancakes! Yum! By the way, I love your table (I don’t know what to call it?) under your TV! Gorgeous! We had a church picnic to go to after church so Cody was listening to the game on his phone the whole time. Haha. He was a happy camper they won which means I was a happy camper too. :)

Lol I already killed a can of pumpkin last week… but I agree, it finally feels like Fall. And yesterday I did yoga, got school work done, made lunches and dinners for the week, AND went on an awesome walk with Molly. Her parents were too busy to entertain her… So obviously I took over.

I love this post! The sesame almonds from TJs are so good and their sesame sticks that I can only buy them every so often bc portion control doesn’t happen with those things! And the sweet potato and those pancakes! And yes, pumpkin season has begun for me and tomorrow is my first pumpkin post. I’ve held off as long as I can!

Sounds like a good Sunday to me…except power to ya for making it to the gym. I would have made an excuse about the couch swallowing me or something. I actually ventured to Toronto as they were having a Veg Fest there this weekend. It was awesome. I totally binged on dessert items because I always find those are the hardest to find vegan things in my little hometown. My butt secretly loves me for it ;) haha

I haven’t broken out the pumpkin yet, but those pancakes are making me want to! Also I love that idea for a Starbucks order. That’s such a good idea for when I want a drink that isn’t as heavy as a latte.

I spent my Sunday feeling ahem… a bit under the weather from the night before. ;) But I did make it out to my favourite cafe to do some work and blog, which was nice!

I love orange foods cause they have betacarotene and when you have too much of that your skin turns a bit more yellow/orange which is what I need since I can’t really tan haha I used to take a supplement (and still do, on and off) to get my skin to not be super pale or cool.

Yummy eats for sure. Your pancakes look so fluffy!

i totally agree with you when you say its crazy people DON’T like grocery shopping! it baffles me every time my mom tells me she is dreading going to the grocery store. i always tell her there are worse places to be going on a Sunday afternoon, like the hospital or the DMV.. will never understand that one because i love grocery stores :)

I made pumpkin pancakes over the weekend too. Gotta love pumpkin season :) Also, those almonds from Trader Joe’s are my favorite (with exception to the Wasabi Mix…actually, it may be a tie!) :) I wish I could keep them in my house but my husband seems to devour them before I get the chance too! AH!
