scenes from the weekend & meals for the week 12.13-12.19

December 15, 2014

Happy Monday, everyone! I’m counting down the days until my winter break, and I couldn’t be any happier. I can’t wait to spend some quality time with my baby dolls.

This weekend was pretty relaxing. On Friday night, we didn’t do much. In fact, after we put the girls to bed I ended up dozing on the couch around 7:30, got into bed at 8:00 to read, and was asleep by 8:30. #partyanimal

I woke up refreshed and ready for the day around 6:30 on Saturday. One would think that because I had 10 hours of sleep the night before, I wouldn’t need a huge coffee.

Wrong! I picked up some Starbucks before the husband headed off to work, and the girls and I enjoyed a few hours to ourselves before their morning nap.

While they were sleeping, I did a quick workout (loving these!), cleaned the freezer, took a shower, and started sanitizing toys. I figured with all of the germs coming in and out of our house, they were due to be cleaned.

Once the girls woke up, we took a quick trip to Costco! We only needed a few things, but it was a beautiful day so we had to take advantage of the fact that it wasn’t bitterly cold outside.

When we got home, we played, ate some lunch, and went down for another nap. I enjoyed some leisure time on the couch reading until John got home so I could go for our weekly haul.

Saturday’s dinner included these enchiladas (so so good!), and I was in bed once again by 9:30. I wish I could say I hated not going out either night, but I really didn’t mind. It was much needed!

Yesterday after church, we headed over to my mom’s for our monthly Sunday lunch with my sister, cousin, and aunt/uncle. Yesterday we had Italian themed, and I brought crock pot lasagna for my contribution. It was a hit!

The girls only slept for an hour while we were there, so they were more than ready for some cuddle time and relaxing on the couch once we got home. (we were too!)

Anyone else sooooo not ready to get rid of those pacifiers yet? I swore up and down we would be done by now, but I just can’t ditch them.

After some Mickey Mouse, we kept the girls’ dinner simple with some PB&J’s and had an early bedtime. After I’m done typing all of this up, I’m snuggling into bed with a new book (I finished one already this weekend – it sucked me in!) and, you guessed it – an early bedtime again. Life is rough. 😉

Need some ideas for meals this week? I’ve gotcha covered!

Saturday – Green Chili, White Bean & Turkey Enchiladas

Sunday – Crockpot Lasagna

Monday – Veg Filled Sloppy Joes & Broccoli

Tuesday – Cheesy Baked Spaghetti Squash Casserole

Wednesday – Roasted Poblano & Black Bean Soup, Cornbread

Thursday – roasted root veggies & chickpeas over quinoa

Friday – Family Christmas Party

I’m going to be/already have modified these recipes a little bit for my poor hubby who needs to avoid cheese for the time being. It probably couldn’t hurt me to do the same actually – we have been eating a LOT of cheese lately! 😉

Have a great Monday!
