I don’t know what got into me this weekend, but I was totally on par with the whole meal planning shennanigans. Usually when I meal plan, I stick with our classic rotations, and I’ll throw a new meal into the mix every once in a while. Well, this girl spent a great deal of time on Pinterest Saturday morning trying to figure out what we should eat for our dinners/lunch this week. Plus, I made a soup last night, so that will serve for some easy lunches throughout the course of the week.
This weekend was the perfect mix of relaxing and fun times – an early bedtime on Friday night (like, I seriously fell asleep watching Criminal minds at 8:30), and some playing at home on Saturday. Then, the husband and I got a night out on the town with some friends at a fundraiser a Dad’s club at my school was hosting. Let’s just say it involved me being a “celebrity bartender”…. ummm, I’m not going to quit my day job any time soon.
The girls had a sleepover at Nana’s house, and after church on Sunday we all went back to my mom’s for lunch. The girls were on a short nap program (their idea, not mine), so after a busy day of playing with cousins, they were zonked.
It was a relaxing afternoon once we got home, and they went to bed super early, meaning plenty of time for me to get this post all figured out before Downton Abbey came on. #perfection
So, back to those meals for the week – I can’t wait for a lot of them… and I even kept in mind some that I want to make next week as well.
Saturday – out
Sunday – loaded cabbage soup
Monday – one pot burrito bowls
Tuesday – copycat PF Chang’s lettuce wraps & rice
Wednesday – Turkey & Spinach Meatballs, pasta (I’m going the spaghetti squash route – yum!), and marinara sauce
Thursday – girls’ night in with some take out
Friday – crockpot bbq chicken sandwiches, roasted garlic potatoes, & roasted cabbage
Here’s to a full week of work (I know, I know) before a three day weekend. Woohoo! Have a great Monday!
PS – If you’re looking for something slightly funny/crazy to read, please refer to this post written almost 4 years ago. I was almost crying from laughing so hard when I stumbled back upon it. Unfortunately, I was not exaggerating in the least. I’m a bit dramatic… and I wonder where my girls get it from. 😉 Plus, it also reminded me of how much I love storytelling… I need to get back on the telling of small moments like this!
