I believe in honesty around here. And honestly, I am going to fail at being witty tonight. I know I try to add a bit of humor and sarcasm every day, but I don’t think today will be that day. Perhaps throughout the post, it will show up, but for now, buckle up and get ready to see me pretty mellowed out.
I know I usually hate Tuesdays, but it kind of felt like a Monday today because of my three day weekend. That’s good for me — tomorrow is already Wednesday! Since Tuesdays are a day where I don’t exercise anymore, I started off with a hot bowl of pumpkin oats topped with cinnamon, coconut, cranberries, and peanut butter.
And because I can’t just show you one picture of my breakfast, here’s another one for you. It’s actually quite pretty — minus the horrible artificial lighting.
Lunch was unpictured but a good time. I went out to Jason’s Deli with some co-workers. I usually don’t go out for lunch, but because they were going to Jason’s, I bucked up and went with them. It will work out perfectly for me tomorrow when I don’t have to pack another lunch. I wish I could find something worth eating every time I go out to eat because I love going out to lunch just for the socialization factor. Those ladies crack. me. up.
When I got home this afternoon, I made a special treat… but you’ll have to wait a while to see that one. Or just like 2 more minutes (depending on the speed at which you read).
Tonight for dinner, I roasted up a buttercup squash. I liked it, but it wasn’t as sweet as a kabocha (<3). I still have half of it in the fridge, so I can’t let it go to waste!
I also had a salad — I really wasn’t even that hungry when dinner rolled around.
My lack of hunger may or may not have had something to do with the below photos.
Fall Balls (original, pumpkin, and chocolate) inspired by Angela @ Oh She Glows
Original Variety
- 1 cup almonds, ground in food processor
- 1 cup oats, ground
- 1 cup pecans, ground in food processor
- 2 tbsp. coconut oil
- 1/4 cup maple syrup
- 1 tbsp. vanilla extract
Mix all ingredients in a large bowl. Put some mixture aside if you want to make the chocolate and/or pumpkin variety. Form into small balls and place on a cookie sheet lined with wax paper. Place in the freezer for 10-15 minutes to set.
Pumpkin Spice Fall Balls
Follow above recipe to make original Fall Balls. Add 1-2 tbsp. pumpkin butter to your mixture before forming into small balls.
Cocoa Fall Balls
Follow original Fall Ball recipe and add 1-2 tbsp cocoa powder to mixture before forming into bite sized balls.

It is taking every fiber of my being not to eat all of these while watching my first full episode of Glee — why I have never watched this show before is beyond me. I am in love.
Oh yes, back to the Fall Balls. I must make them last in my fridge until tomorrow night when I have to bring treats to Bible Study. This will be a challenge — especially because the Husband is a fan. I think the ingredient that made these so stellar were the pecans. Absolutely delicious. You MUST (did I say must? because I mean it) go try these now. They were super easy to throw together!
