Why do these weekends always fly by so quickly? In good news, there’s only one full week left of school until I get to spend a few extra days with my little family for Thanksgiving break next week! I only have to get through report cards and two nights of conferences to get there!

This weekend was full of the usuals. As I told you on Friday, we had no plans this weekend, which was so nice. We hung out in sweats Friday and Saturday night, and it was just what I had hoped for, especially since Brooklyn decided we were starting our day on Saturday at 4 AM. Yikes!

Other than parking my behind on the couch, I also did some meal planning and grocery shopping. Does anyone else meal plan for a weird “set” of days? For example, I don’t plan from Sunday-Saturday. I always plan from Saturday-Friday. I think it’s because I typically do my grocery shopping on Saturdays, so I just start there.

I’ve been doing a lot of scouring around for different recipes to try this week and I took a few ideas from some of my favorite ladies as well. Looking for some ideas for the week? Here’s what we’re doing (did) for our dinners.

Saturday – Clean out the fridge night!

Sunday – Stuffed Pepper Skillet (anyone interested in this recipe?)

MondayCream Cheese Chicken Chili & Cornbread

TuesdaySlow Cooker Honey Sesame Chicken, Brown Rice, Broccoli

WednesdayVegetarian Enchilada Casserole

Thursday – Loaded Baked Potato Bar (using the crock pot to bake the potatoes!)

Friday – Wing it, leftovers, or pizza

I also plan out what the girls are going to eat for lunches during the week as well. Would any mamas out there want me to share this in the future? I know I am always looking for ideas for lunches for E & B!
