Happy Wednesday! Why is it that the weeks I have off seem to go by so much faster than the weeks I am working? 😉 It’s a universal truth, isn’t it?
It’s been a long long time since I participated in Jenn’s What I Ate Wednesday party, so I thought it would be fun to show you what I ate yesterday as well as give you a little “day in the life” fun as well!
Yesterday was all about cleaning/organizing/un-Christmas’ing my house. It was good for my soul, that’s for sure!
Breakfast – 7:30 AM
I didn’t actually get a picture of my breakfast (whoops!) but it was a piece of peanut butter toast with banana slices with a side of Brooklyn on my lap! She is NOT a morning person, and she loves to cuddle in the morning when she wakes up, so I was more than happy to eat with a sidekick and to watch a little Mickey Mouse.
Before John left for work, I made a coffee run and sipped it throughout the morning.
Once the girls went down for their morning nap around 9:00, I set off to get the Christmas decor down. I also took some time to re-organize/decorate as I went. I love moving things around the house – pictures, knick knacks, etc – to give everything a “new” feel. We’ve been needing to carve out a little space for the girls’ toys, so I kept the space that we had been utilizing for the Christmas tree for a little play corner. It is making me feel so much better that their things are out of the way AND when you enter my house, you don’t automatically see toys. Win, win!
When the girls got up from their naps, we played for a little while before lunch (for them). I wanted to relax and eat lunch when they went down for their afternoon nap, so I snacked on some crackers and artichoke & jalapeno dip. Yum!
Can we talk about this awesome cobb salad for a second here? Romaine, chickpeas, tomato, avocado, corn, red onion, and hard boiled egg drizzled with honey mustard dressing. It was worth the wait for sure!
After I ate, I bribed myself with a treat to wash the floors. Anyone else do that? I told myself if I washed the floors, at the end I would get a cookie. Now I know why children are easily bribed with sweets. 😉
Monster cookies! I like making them around Christmas with red & green M&M’s. Festive!
The rest of the afternoon flew by. By the time the girls got up from their nap and played for a little while, it was about time to make dinner! I was going to make Stuffed Pepper Skillet, but instead I decided to make Korean Beef Bowls. I had a hankering for them this afternoon, and luckily we had almost everything to make them. The Husband just had to pick up a few things on the way home.
This is one of my favorite recipes. It literally takes about 15-20 minutes to get onto the table. The best!
The rest of tonight is going to be spent relaxing after I finish this post, take a shower, and put away some laundry. I’ll also probably have a snack (or 7) before I finally go to sleep.
Today we are heading off to a friend’s house for New Year’s Eve festivities, and the girls are going to sleep over at Nana’s house! It should be a fun night! Be safe everyone – have fun ringing in the new year!
