This week will be a “normal” week, and I couldn’t be happier. Last week I had a few evening requirements for work, so I’ll be happy to get home at my normal time this week and hang out with my little ladies. Today we’re getting our first actual snow storm this season (how is it February and this is just happening?!), so I’m looking forward to our dinner tonight (see below).
Last week’s dinners were a big hit, especially the enchilada quinoa. I don’t know what it was about that dinner, but both the girls gobbled it all up! They are super picky, and they typically refuse to try new things. This was a pleasant surprise for us – we couldn’t believe it!
I’m keeping it simple with dinners this week – a chili, a Crockpot recipe, some make ahead stuff – to keep the evenings stress free.
Saturday – black bean, sweet potato, & spinach quesadillas
Sunday – turkey chili
Monday – cobb salads
Tuesday – quinoa stuffed bell peppers
Wednesday – black bean & sweet potato enchiladas (loosely based off of this recipe)
Thursday – rotisserie chicken & roasted vegetables
Friday – leftovers or wing it
