Breakfast essentials!

In today’s bowl: 1/3 cup gluten free oats, 1/2 smashed naner, 1 tbsp. ground flax, lots of cinnamon, 2/3 cup water, splash of almond milk, 1 chopped FIG, pb spoon

This was so good – I loved how chewy and gooey the fig was in the warm oatmeal.

After breakfast, I was really feeling the figs, so I decided to try and find a recipe to make fig bars! I love Fig Newtons, but they are obviously gluten laden and overly processed with not so great things.
I found a recipe here , but adapted them a bit. Here’s my adapted recipe:
Gluten-free, Vegan Fig Bars
Filling
  • 8 organic turkish figs (or any figs will do)
  • handful of raisins
  • 2 tbsp chopped walnuts
  • 1 tbsp agave nectar
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger

    Dough

  • 1 cup gluten free flour mix (I used Bob’s Red Mill all purpose)
  • 1 cup oats (Bob’s Red Mill gluten free for me!)
  • 1/3 tsp baking soda (you can use 1 tsp baking powder here, I can’t due to a corn intolerance)
  • 1/4 tsp salt
  • 4 oz. unsweetened apple sauce
  • 3 tbsp. agave nectar
  • 1/4 cup h20

How it’s done…

Put all the filling ingredients into a food processor (My new food processor is still packed in a box somewhere among all of my wedding shower gifts – a blender did just fine) and blend/process until almost smooth. If you like a chunky filling, don’t over process it.

Mix all the dough ingredients together


The dough should look something like this.

Spray a 8×8 pan with olive oil, cooking spray, whatever you have on hand. Spread half of the dough into the pan.

Spread the filling mixture on top of the dough.

Sidenote: this was VERY sticky – make sure you’re gentle with the filling so you do not disturb the dough underneath.

Spread the remaining dough on top of the mixture and bake at 375 degrees for 30 minutes.

Aren’t they just screaming “make me now!”?

It doesn’t even matter that I ate one at 9 AM. This was too good to pass up.

The note I wrote for my family – sometimes they get scared off by “vegan” or “gluten free”. I know my brother-in-law will gobble them up when he gets home from work! He’s not afraid of anything!

While those bad boys cooked, I worked on some yoga and abs – these videos are great! I love just dragging my computer into the family room and getting a workout! After my long run yesterday, I really just needed a day of stretching out. It was exactly what I needed!

Off to go lay in my aunt’s spa all day! Ahhh summer…. What’s your favorite “lazy” summer activity?
