Can I just get a Hallelujah for Friday? It’s more than TGIF – It’s a HIF (Hallelujah It’s Friday!).
In reality, this week was a piece of cake. It actually flew by. Despite being so exhausted I could fall asleep right now, I’m going to enjoy my night and be a big girl. This means staying up until at least 9:30 tonight. It’s party city over here, I tell ya.
There’s a couple of reasons why I really enjoyed my day today. One was because I didn’t have to run before school today…. or after school today for that matter. Since I am running in the Chicago Half Marathon on Sunday, today and tomorrow are rest days so I can have fresh legs to run with on Sunday! My morning was leisurely and started with a delicious bowl of oats.
That would be standard overnight oats topped with some cooked peach skins (from my freezing experience yesterday – post to come), peanut butter, and strawberry preserves. I loved the preserves in my oats and am beginning to wonder why I had never had that topping before. I’m all about those PB&J oats!
On my way out the door this morning, I had to grab a jacket! It is getting cold outside in the morning. I love it though – the changes of the seasons may be one of the main reasons why I love Chicago. However, if we could just skip over that whole winter situation, I would love it so much more.
I felt bad for this guy today….
Don’t you remember when he was just a baby? And when he was thriving? I didn’t mean to kill you little guy. I was selfish and only thought of myself for the past month of my life. Somehow, you just slipped through my fingers.
Not to worry, I got over it really fast – especially when I got to school and remembered that Friday = treat day! Why is it I have yet to buy watermelon in the past few months of my life? Every time I eat it, I think to myself, “I should buy watermelon the next time I am at the store!” – then I forget.
Before the picture was taken of my midmorning snack, I had eaten about 3/4 of the veggies which were previously there. I was STARVING by the time my kids had art at 10:00. That is way too long without eating for me (5:45 – 10:00?).
Lunch was a delicious plate of leftovers. If you’re wondering how I even had any leftover sweet potato fries from last night, you must click here. That sweet potato was the size of an abnormally large newborn.
I also had some carrots. Is it just me or has my food had quite the orange hue lately?
After school, I quickly got some work done to prepare for next week and went on my merry little way to run some errands. Since I was in need of some major fuelage, I snacked on this delicious apple.
I honestly cannot even explain to you how great these apples areÂ – if I could ship one to each and every one of you, I totally would. They’re just THAT good.
Since it’s Friday, you know what that means….
I look forward to these all day on Fridays. I’m pretty sure I even say “aaahhh” after I take my first sip. While it didn’t quite live up to the best iced coffee I have ever had in my life…EVER, it sure did hit the spot.
There were a few stops on my shopping trip after school. They included:
Whole Foods for gluten free oats (and coconut flakes – hey, I showed a great deal of control in that store)
Target for a birthday gift for our nephew whose party is tomorrow
Kohl’s to gaze from afar at all the things I want but can’t afford right now – I left with 5 headbands for 5 dollars. Don’t judge me.
Jewel – where I scored ice cream and almond milk for $1.50 total. Oh yes, you read that right. The powers of coupon clipping at its finest.
When I got home, I had pizza on the brain. It was probably because the husband told me yesterday he wanted to eat pizza tonight (meaning, he wanted me to stick his frozen pizza in the oven… ::sigh::). I decided this would be the perfect opportunity to try out one of Angela’s new recipes. But first, I needed some hummus to take the place of her Cashew Basil Cheese Sauce – while I would have loved to try that, I just simply did not have the ingredients and hummus is always a great substitute for a cheese like sauce.
Simple Garlic Hummus
1 can chickpeas, drained
1-2 tbsp. olive oil
2 cloves garlic
salt and pepper to taste
Place all ingredients in a food processor. Pulse until smooth.
I may or may not have eaten half of the hummus before it even made its way to my Stuffed Portabella Pizza.

Along side my “pizza”, I had a hugh jass salad (thanks for the “clean” version of that phrase Allie – I chuckle every time I see you say that!)
No, seriously………. it was huge.
Can I just tell you all how excited I am that I get to veg out and not wake up at five in the morning tomorrow? While my body will most likely get me up at 6, that’s still better than 5. I also have big plans for tomorrow’s breakfast – EPIC plans. Pancakes, anyone?
