My mind is a complex unit.

While it may not be the hub of productivity, it is constantly running.

Worrying.

Planning.

Thinking ahead.

Contemplating how I can get away with tricking my husband just one. more. time.

Scheming how I can possibly eat just one more bowl of pumpkin oats without you all deciding to stop reading my blog.

Believe you me, my brain is not somewhere you want to be.

Sometimes, I just crave simplicity. I spend so much time during the day thinking that when I get home, I have no desire to make what is planned for dinner.

Enter in: Simple Grilled Veggie Salad (with a horrible picture to match)

In the mix:

  • head of romaine
  • chopped tomato
  • cucumber
  • grilled onion, brussels sprouts, celery, red pepper
  • sunflower seeds
  • simple balsamic dressing

On the side, I had some leftover butternut squash from last night.

The problem with simplicity though is that when I don’t properly think through how filling my dinner will be, I will be ready for a snack by the time the dishes are washed.

So much for that one.

Salads are great…until you realize it’s 15 minutes later and you’re hungry again.

I feel the same way! There are so many days when I feel like my mind is on overload and the last thing I want to do is think hard about dinner. Usually, cooking is more of a relief for me and I’m able to cook without thinking. It’s like I zone out and into my element. But then, there are some nights when I am just so spaced out that the only energy I have left is to pour a bowl of cereal and call it dinner.

My mind doesn’t stop!! It is always in motion. My joke is that if my body stayed moving as much as my mind did I would have a smokin hot body! My friends at times have to remind me to finish my sentences…I know it is sad! I love salads for dinner; however, the only way I can fill up on just salad is if it is big and contains some starchy carbs. I usually make a dinner salad out of the normal fixings, but I also throw in some pasta- it helps fill you up.

Someone in my mind would discover that I spend the majority of my day thinking about food…not in an unhealthy food obsessive way, just thinking about it in general…new recipes etc.

Oh god. If someone entered my head… well, first they’d get lost for hours. Many many trains of thought that went nowhere. Then they’d find out how bored I am at work and also how strange my daydreams can be. I guess you may say I’m a dreeeaaaammmmmmeeeerrrr….

Had to channel my inner John Lennon on that one. :)

I love simplicity, too…and have SO been there in the needing a snack twenty minutes later :P

yummmm your oats always look SO GOOD!! I feel you- i have to give soo many thinggs to the Lord or else I will go crazy thinking (not with meals- just everything in my life!) and sometimes i want a DANG FROZEN MEAL!
