Daylight Savings kicked my butt today — anyone else?

I have been dragging my rear end all day long, hoping for some relief.

No relief found.

I actually awoke to the sound of my alarm clock for the first time on a weekend in a really long time. There’s something about the resonant beep of an alarm clock that irks me on a Saturday or Sunday. Even though I usually just wake up without one, I was not feeling my wake up call this morning.

Lucky for you, no brain juice = a daily post for readers. Yahoo! I have had many readers asking questions lately about what my portions look like, what my calorie intake is, etc.

I rarely do daily eats posts because I don’t (read: won’t) photograph everything I eat. It’s just not feasible for me, and it’s really not my style. I plan to do a FAQ post answering specifically these questions, but please remember that the food I picture here is not everything I ate today — just my main meals. I would hate for someone to read this and think it was enough substance for someone to eat in a day. It’s not. Also remember that everyone’s bodies are different  and different things work for everyone! ::steps of soapbox:: (for now)

This morning, I was in the mood for something chocolatey, so I whipped up a bowl of chocolate banana oats.

In the bowl:

  • 1/3 cup gluten free oats & 1 cup water (cooked until a rapid boil begins, then covered overnight)

In the morning I cooked my oats in:

  • 1/3 cup water
  • 1/3 cup almond milk
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla
  • 1/2 banana, sliced thinly and whisked in
  • 1 tbsp. chocolate Sun Warrior

Topped with:

  • 1/4 chopped apple
  • cinnamon
  • coconut
  • crumbled Chocolate Oatmeal Banana Cookie
  • peanut butter (half chunky, half smooth — just because)

Quite an intense bowl of oats, wouldn’t you agree? It’s my bowl of choice as of late. I always end up eating it all and then getting sad because it’s gone. It’s finger lickin’ good — not that I would know or anything.

I love the whole cooking it the night before for a couple of minutes too because it really plumps the oats up!

I then got ready for church, and haphazardly attempted to take a picture of myself for a “before” hair shot since I got mine done today.

About that “after” picture.. yeah, that never happened. Sorry.

For lunch (read: “dinner” in the Husband’s vernacular), I made my Spicy White Bean Chili with a few modifications. Because apparently I can’t even make my own recipes without changing something. This time I used more beans, more tomatoes, added carrots, and more spice!

It was quite delicious. You know you’re in for a treat when the Husband sits down and exclaims, “Now, what exactly am I eating here!?”. Lucky for him, I fill him up with enough beans these days that he hardly even misses meat. I usually only make him a meat meal 2-3 times a week (if that). He hasn’t complained yet, so I’m taking it!

And if you are my real life family, please don’t point this out to him….

On the side, I made some socca. I studied some recipes and made the one from Pure2Raw.

I made the basic recipe, and to be completely honest with you… I’m not so sure what the big deal about the socca is. Perhaps I’ve missed something, but it was just okay. I can see it working well as a blank canvas for a variety of different spices and flavors, but I can’t say I will die tomorrow if I don’t eat more.

After lunch, I cleaned the house top to bottom. It was really looking a little gross around here as Charlie is really shedding his winter coat as of late. It is not making me happy. I always told the Husband I wanted a dog that didn’t shed, and up until now, he didn’t understand why. It’s okay though — we can’t live without him now.

After I went to my mom’s so she could do my hair, I finally got to indulge in my leftovers from yesterday’s Borrowed Earth Cafe experience!

Looks like a hodge podge of food, doesn’t it? That’s because it was.

Starting in the top left hand corner and going clockwise: Spaghetti Pasta Bake, Beet Salad, Spinach Salad (topped with more hummus), Leftover Pizza from Friday night (not from Borrowed Earth), Kale Salad, and more Spinach salad. March 13, 2011 020

It was delicious. I still am hanging onto my sister’s leftover “Pizza” for tomorrow’s lunch. I’m so excited!

Thankfully I did not succumb to the overwhelming desire to take a nap today — which means I should be hitting the hay in, oh.. about 30 minutes (8:00 — really pathetic, right?). Not before my nightly snack of some Love Grown Granola though! I love that stuff.

The only upside to this whole gaining an hour of daylight is of course the food blogger in me rejoicing in the fact that my dinners won’t look horrible anymore.

Somehow, I feel I won the battle.

Let’s face it — I always win the battle.

(Just ask the Husband.)
