You know the saying “Elephants never forget”?

Believe it or not – this is the first time I wish I could call myself an elephant.

That’s usually not a statement you hear anyone say, especially a girl – in fact, who really wants to be called an elephant? I’ll tell you who wants to be called an elephant: a girl who forgets everything.

Actually, I don’t forget everything. I remember everything – well, everything that is really not important in real life every day situations. I can remember what my best friend’s second cousin’s uncle’s brother twice removed told me when I was six (hypothetically speaking, of course). I remember what I wore on my first day of sixth grade (weren’t button down white shirts with argyle vests cool when you were eleven?). I remember my cousin telling me when I was four that I wasn’t allowed to sleep over at her house until I was five (oh yes you did, cousin).

Remembering events that will make my life easier on a day to day basis is not my forte though.

My library books were due yesterday – they are still sitting on my nightstand. My prescription has been ready to be picked up for the last 24 hours – somehow passing the pharmacy multiple times a day isn’t enough for me to pull in and remember to pick it up.

Going to the grocery store today I needed three things – lunchmeat, bananas, and potato chips (obviously only one of those products were for myself – any guesses?). I left the store with lunchmeat and bananas – no chips. The poor Husband is going to have a boring lunch tomorrow.

I firmly told the Husband last night I was going to bring home my power cord to my work laptop today since Charlie shorted yet another power cord (don’t ask). Guess who walked through the door without her power cord this afternoon which resulted in the Husband having to buy a $90 power cord at Best Buy. Guilty as charged. However, I’m going to leave something that the Husband forgot about unsaid – I’ll just tell you that it’s costing us more than $90.

One thing I never forget though – is how to make that marinara sauce. I’ve got it down to a science. Chop the onion, mince the garlic, yadda yadda yadda. But this isn’t even about marinara sauce. Okay, it’s always about marinara sauce. I would drink this stuff if I could. Which basically means that I do – please don’t judge me.

I did forget how much I love eggplant. After seeing a vibrant colored one at the grocery store the other day, I knew I had to start my eggplant season – soon. And you know what? There’s no better vegetable to go with eggplant than mushrooms. Both vegetables are extremely meaty and filling – perfect for a ravenous girl after forgetting to pack her lunch today (don’t worry, we went out).

Sautéed Italian Eggplant and Mushroom

  • 1 eggplant, cubed in 1” pieces
  • 1 pound white or baby bella mushrooms
  • 1 tbsp. olive oil
  • 3 tbsp. water
  • 2 tsp. basil
  • 1 tsp. oregano
  • 1/2 tsp. parsley
  • 2 tsp. garlic
  • salt and pepper to taste

Directions: Start by cubing your eggplant and halving your mushrooms lengthwise. Heat a large sauté pan on medium high with the olive oil, Add all of your eggplant and mushrooms, followed by your 3 tbsp. water and spices. Cook for approximately 5 minutes uncovered, stirring occasionally. Cover and lower the heat to medium, stirring every 2-3 minutes until vegetables are tender.

Enjoy as a side dish or as a pasta topper.

I’m not going to forget how delicious this tasted on top of brown rice pasta this evening. I’m not even going to forget just how good that chardonnay tasted going down. I’m just hoping the chardonnay will help me forget the damage that was done to my car this morning (another story for another day).

I’m incredibly forgetful – and yet, at the same time, don’t forget anything. Say whaaa?! haha. I remember the important stuff…like when to be where, etc; and forget all the little things that I wish I could remember!
Your marinara looks so good. Goes perfectly with mushrooms and eggplant!

I used to be soooo on top of things but i live on 4 hrs of sleep, work FT and parent FT. Needless to say, i am more forgetful now than i used to be pre kiddo.

I can remember everyones birthday and anniversary and even how long they’ve been married (better than my brother in laws) but I can walk into a room and instantly forget why I’m there. I got to bed at night and remember that I put in a load of laundry hours ago, my poor husband gets stuck fixing that mess nearly every night.

Haha, so true, so true. I can remember so many random, tiny little details from the past, but things like, “pay the rent on the 1st” or “call back friend” AND “return library books” (yes, me too, two days late now, I’m a horrible person) I can never remember!! But somehow I manage to pay all the other bills, and call my Mom every day, (library books no chance)…

I used to never forget anything, but that isnt the case anymore – I have to constantly write lists and set reminders in my phone and though the phone reminders drive me nuts constantly going off without them I wouldn’t remember a thing!

I remember a lot of things… a lot of useless crap that people don’t need to know. I can remember who wore what and on a certain day. I can also remember stupid random stuff from middle school. But I always forget the important things!

I’d like to think I’m pretty good at remembering things, but I’ve got nothing on my dad. He remembers dates of things that happened in the past like they JUST happened. It’s creepy. I’m picky about eggplant. As in I’ve only enjoyed it as eggplant parm. Wine on the other hand…

I am a nurse who works overnights so I never remember anything! My roommate describes it as commuting to and from Japan, constantly jetlagged :(

IM SO BADDDDD At remembering things!! actually.. I remember the things I want to remember.. hahaha does that make sense?.. when I dont care about something- it just goes in one ear and out the other!.. umm LOVE this eggplant- i usually hate eggplant, but you made it look super tasty!

I’m usually very elephant-esque when it comes to memory :) But when things get busy (aka the end of the semester) little things tend to be forgotten. Oops!

I’m just like you in that I remember small things from long ago. I used to have a much better memory, but now that I’m getting older I feel myself relaxing about certain things, which means I don’t remember absolutely everything. I learning to like it!

I am so forgetful too, I have to write everything down. You should see my desk at work, everything has a list! haha I only tried cooking with eggplant once and it was an epic failure…this looks relatively easy though so I might have to take another crack at it!

I have the memory of an elephant. Seriously, I remember stuff from when I was three years old that my parents forget- it’s crazy. I have an amazing memory for events and dates, but it sucks for to-dos!!

Truth: I skipped the writing in this post, cos as soon as I saw aubergine chunks, I knew there’d be a recipe – and I LOVE aubergine!

I’m definitely forgetful and I’ve just learned to accept it because there really is nothing I can do about it. I once asked my brother 4 times how it was that he met his current girlfriend.. needless to say, he was not impressed with me.

I am just like you! I remember little memories from when I was three and I remember telephone numbers of girls I went to grade school with, but I can’t remember to take my workout bag with me in the morning, or leave a check on the table for my bf to deposit while I’m at work. I never remember simple everyday tasks!

I am the same way about the drive bys. My dry cleaning has been ready for two days and I drive by it, but I’m not in a hurry to pick it up because it’s sweaters I don’t need to wear. I am good at remembering things I just choose to let unimportant things lapse out of laziness.

I remeber everything because I write EVERYTHING down. My pocket are always filled with post-its containing notes to myself, lists, ect…

I can’t go food shopping without a list either. I turned around and went home once because I forgot it.

Everyday I write out a “things to do” list because if I didn’t nothing would ever be accomplished! I even like to add things I have already completed because putting that “check” next to the to-do makes me feel better :)

Oh my gosh, I forget EVERYTHING! I make a list when I go to the grocery store so I WON’T forget anything and I forget to take the list out of my purse!!

Oh, and I’ve stopped checking out library books…why oh why can’t I remember to return them on time?!

We have got to seriously be the same person. I am soooo on top of the “important” things, but when it comes to say, picking up a librarby book i have on hold, or buying banana peppers… i totally forget! BTW, I totally can (and do!) drink marinara sauce. I even bring it with me to resturants sometimes and use it as dressings. Same goes for pico de gallo… i can eat that stuff with a spoon! (or just slurp it out of the tub when Ryan’s not looking, haaaa!)

I forget some things and don’t forget others… I’m typically very good with birthdays and anything related to people but suck at historical dates, and am always forgetting just one thing when I go somewhere… or forgetting where I put things. I have recently lost my planner and my pencil case for this reason… kind of devastating ;)
