I’ve decided I should probably stick to what I’m good at — making soup.

Apparently fudge making wasn’t in my cards as shown in last night’s post.

But what I am good at is making soup.

And to be perfectly frank, I don’t know how many more stories I can come up with about my weekly soups I have been making. Because really, no matter what angle you look at it — soup is soup. And it’s good.

But don’t you worry — in no way shape or form does making soup mean that it is going to snow like I keep wishing. If soup meant snow, I’d be knee deep in the fluffy white powder by now. Instead, I’m surrounded by rain. This does not make me a happy woman when I have to clean off Charlie’s paws every time he goes outside to chase squirrels and other noises he “thinks” he hears.

So last year I made a spin off on chicken noodle soup — you may remember my chickpea noodle soup. I have to say, I think that was the best soup in the history of CEC soup making. But last night, I wanted to create a soup that reminded me of chicken and rice soup. And what better substitution for chicken than chickpeas?

Yeah, so that’s about all I’ve got for you — except that I need to tell you that adding kale to this was the best idea I’ve had since eating that cookie too fast out of the oven on Sunday and burning the crap out of my mouth (insert sarcasm here).

Oh, and short grain brown rice rocks. Seriously. Don’t substitute it with long grain brown rice. Short grain is short (duh) and chewy and awesome.

I don’t blame you for writing soup recipes, what else are you supposed to cook when it’s cold out? This looks super yummy, btw. Rice soup is the best because after the leftovers sit in the fridge for a while they kind of turn into risotto! :)

Yummm this sounds great, especially for a chicken soup lover like myself! Although I am not convinced that chickpeas make an acceptable chicken replacement other than name-wise…perhaps this soup will prove me wrong!

they don’t really - but the only “& rice” soup I can think of is chicken, so why not chickpeas?

Don’t stop posting soup recipes! Love soup! We have probably eaten soup 2x a week for the past month now… Sometimes I’ll make it a little thicker so the husband doesn’t have to eat it in it’s liquidy gloriousness (but it’s still just SOUP!)

I love soup recipes because during the winter that is all I fix. We fix a big pot and eat out of that for a week. It never gets old in my opinion, but I know my dad probably gets a little tired of eating liquid. However, I bribe him with homemade bread so I think he actually looks forward to when I make soup.
Thanks for the recipe I’m definitely going to be making this for dinner next week after we finish off the pot I made this week!

Mmmmmmmmmmm.
Chick pea soup sounds so comforting! Does it really make the soup taste like chicken? A good addition to the soup would be soy “chicken” tenders (these rock!).
PS: Sorry about your fudge experience…. it might just be an improper temperature setting.

Soup is SO needed at this time of year. Plus, the way I look at it, soup = winter’s salads. Full of veggies and low in calories but super filling. With everything calorific and heavy and rich that winter cooking throws at you, soups are a welcome respite, no? :)

Just found your site and loving the recipes!!! As a mom of a celiac child, your recipes are fantastic. I’m making this soup tomorrow…do you use dry beans or canned beans in your recipes? I’m trying to move away from canned and use more dry, but it’s not quite as convienent!
