I’ve decided I should probably stick to what I’m good at — making soup.
Apparently fudge making wasn’t in my cards as shown in last night’s post.
But what I am good at is making soup.
And to be perfectly frank, I don’t know how many more stories I can come up with about my weekly soups I have been making. Because really, no matter what angle you look at it — soup is soup. And it’s good.
But don’t you worry — in no way shape or form does making soup mean that it is going to snow like I keep wishing. If soup meant snow, I’d be knee deep in the fluffy white powder by now. Instead, I’m surrounded by rain. This does not make me a happy woman when I have to clean off Charlie’s paws every time he goes outside to chase squirrels and other noises he “thinks” he hears.
So last year I made a spin off on chicken noodle soup — you may remember my chickpea noodle soup. I have to say, I think that was the best soup in the history of CEC soup making. But last night, I wanted to create a soup that reminded me of chicken and rice soup. And what better substitution for chicken than chickpeas?
Yeah, so that’s about all I’ve got for you — except that I need to tell you that adding kale to this was the best idea I’ve had since eating that cookie too fast out of the oven on Sunday and burning the crap out of my mouth (insert sarcasm here).
Oh, and short grain brown rice rocks. Seriously. Don’t substitute it with long grain brown rice. Short grain is short (duh) and chewy and awesome.
Chickpea Rice Soup
Makes: 8-10 cups
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: ~60 minutes
- 3 cups prepared chickpeas (about 2-15 oz. cans)
- 1 cup short grain brown rice, dry
- 8 cups vegetable broth
- 1 tbsp. olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 2 ribs celery, diced
- 2 carrots, diced
- 2 cups kale, trimmed and cut into 1 inch chunks
- 1 tbsp. basil
- 1 tbsp. oregano
- salt, pepper, and garlic powder to taste
Directions: In a large pot, heat 1 tbsp. olive oil over medium high heat. Dice your onion, celery, and carrots and add to the pot. Mince your garlic and add as well — stir frequently for ~5-6 minutes, or until vegetables become soft and translucent. Once the vegetables are tender, add your vegetable broth, chickpeas, kale, and spices. Bring to a rapid boil and lower the heat — simmer for at least 45 minutes to allow the rice to cook. Add spices to taste before serving.
And someday I’m going to stop posting soup recipes but I just. can’t. stop.

YUMM this soup looks delicious, anything with kale in it sign me up!
It’s delicious- AND it photographs really well, that’s all you need in this world anyway. Forget the story!
You know- that came out exactly wrong—> because I *love* your stories, so you can’t forget them all together
gosh, I’m never going to be able to forgive you. EVER! just joking.
I don’t blame you for writing soup recipes, what else are you supposed to cook when it’s cold out? This looks super yummy, btw. Rice soup is the best because after the leftovers sit in the fridge for a while they kind of turn into risotto!
I know! It gets alll thick and delicious. I love it.
Yummm this sounds great, especially for a chicken soup lover like myself! Although I am not convinced that chickpeas make an acceptable chicken replacement other than name-wise…perhaps this soup will prove me wrong!
they don’t really - but the only “& rice” soup I can think of is chicken, so why not chickpeas?
Don’t stop posting soup recipes! Love soup! We have probably eaten soup 2x a week for the past month now… Sometimes I’ll make it a little thicker so the husband doesn’t have to eat it in it’s liquidy gloriousness (but it’s still just SOUP!)
Okay, you convinced me.
for the record, i am NOT on board with the arrival of snow, but you are right… i would take it over this cold rain any day. at least it’s pretty!
this soup looks yummy
Come on, doesn’t a snow day sound nice?
Yum! Looks amazing! You most definetly can make soup! Haha
Yummy! I love soup. It snowed here last nigh. Just enough to cover the ground.
lucky.
I <3 short-grain brown rice. It's so hard to find at my local stores.
That’s very upsetting! Do you have anywhere that you can get it in bulk?
Possibly - there’s always Amazon!
Haha I know what you mean - I’m all about the soup and chili recipes lately! They’re seriously all I crave during the winters. Definitely going to have to make this one soon.
Please don’t ever stop posting about soup! It is wonderful and pretty much all I eat in the winter!! This looks amazing and it is already on my list to make this weekend
I won’t. I promise. Just for you.
I love soup too…it’s so hard to mess up!!!
This soup sounds so comforting! I like that you used chickpeas too.
And please don’t stop posting soup recipes. I LOVE soup!
I won’t. Just because you (and others) asked me not to.
Made your Cabbage Lentil Soup last night.
Yum. Thanks for the recipe.
Keep up the grand soup work, because me likey.
Glad you liked it!
I love soup recipes because during the winter that is all I fix. We fix a big pot and eat out of that for a week. It never gets old in my opinion, but I know my dad probably gets a little tired of eating liquid. However, I bribe him with homemade bread so I think he actually looks forward to when I make soup.
Thanks for the recipe I’m definitely going to be making this for dinner next week after we finish off the pot I made this week!
The Husband gets tired of it too, but oh well! It’s fast and easy!
Oh yum! I am completely obsessed with soup right now, mainly because minnesota is so cold!!!
I should make this for my mom when I go home, she loves different kinds of soups and I’d love to get her to try one with chickpeas rather than chicken!
kale! mmm! kale chips are my quintessential of food creations!!! i hope to learn more about ‘your’ kale chips! but, aside, another fab recipe! merci beaucoup, CEC!
xxx
I do have to get a kale chip recipe up in here, don’t I?
I have a version of your cabbage soup simmering in my crock pot right now! So excited to get home and eat it !!
Oh I’m excited for you!!! Which one? THe loaded cabbage or the cabbage lentil?
A little of both? haha. I will post and link back to you tomorrow
chickpeas are such a beautiful and versatile legume. yummmmmy soup - bookmarked for when we get back from vacay.
and I am jealous of your so called vacay.
The fudge looks so sad, but this look delicious and warm enough for cold winter nights. Snow or no.
Mmmmmmmmmmm.
Chick pea soup sounds so comforting! Does it really make the soup taste like chicken? A good addition to the soup would be soy “chicken” tenders (these rock!).
PS: Sorry about your fudge experience…. it might just be an improper temperature setting.
no, it doesn’t really taste like chicken. It was just a fun name.
Don’t stop! I love soup. And you.
Soup is AWESOME and this one looks super yummy, Chelsey!
I need that now. I am cold and that looks delicious!
This looks gorgeous!
That looks yummy! I am also GUILTY of a serious soup making addiction! There is just something about the chill in the air that makes me want to eat everything with a bowl and a spoon! lol
Soup is SO needed at this time of year. Plus, the way I look at it, soup = winter’s salads. Full of veggies and low in calories but super filling. With everything calorific and heavy and rich that winter cooking throws at you, soups are a welcome respite, no?
Yummy!
I have still never tried kale and soup sounds like a perfect place to start! Also, I have a high of 10 degrees and 8 inches of snow here. I would love to ship it your way!
I have just recently fallen in love with kale. I pick it up every week at the grocery store now. Just started coming down with a sore throat so I think this may be on the menu for tomorrow night! Thanks for the great recipe.
I’m all about the soups right now too! I love kale and love chickpeas…can’t wait to make this one!
I am such a soup lover, too. Don’t stop posting soup recipes-I love the inspiration!
Soup literally just makes me so happy. BRING EM ON.
Soup never gets old. Especially in that cute little triangular bowl of yours!
You know what, its meant to be summer here, but its super wet and really cold - we have the heating on. This soup is perfect to stop me feeling so grumpy!
it’s a total win that I have all these ingredients in my fridge right now! Agreed that kale makes the best addition to soup.
Combining kale and chickpeas sounds like heaven in a bowl!
The coldest weather we’ve had in FL is 50, but I think I am going to make this anyway!
My husband and I LOVE soups!! And I agree, I am ready for the snow, that is when soup tastes even better for some reason!! This is defiantly going in my recipe box! I love fast and healthy meal ideas! Makes my life so much easier:)
Just made the soup! Delish! (I randomly have a whole bunch of bulgar, so I used that — it’d probably be even better with rice!)
Just found your site and loving the recipes!!! As a mom of a celiac child, your recipes are fantastic. I’m making this soup tomorrow…do you use dry beans or canned beans in your recipes? I’m trying to move away from canned and use more dry, but it’s not quite as convienent!
Thanks!!
