warming up

March 14, 2012

Was it as beautiful where you live as it was where I live yesterday? I don’t know what is going on with this weather, but I will happily embrace it. The temperatures in Chicago were at an all time high yesterday, topping out in the high 60’s. Today, it’s going to get as hot as 78 degrees. I can’t remember a time where this has ever happened in March. We’re usually praying it breaks 60 at least one day.

Peas and Crayons

Breakfast — 6:00 AM

Yesterday morning’s breakfast was incredibly delicious. It hasn’t gotten warm enough in the morning for me to start craving overnight oats quite yet, so I’m still rocking the hot stovetop oats.

At night combine: 

  • 1/2 cup oats
  • 2 cups water
  • 1 tbsp. chia seeds

Bring to a boil and cover. In the morning add:

  • 1/3 cup almond milk
  • 1/4 cup egg whites
  • 1/2 banana
  • 1 tsp. vanilla

Whisk until smooth. Add 1 tbsp. chocolate protein powder. Pour into large cereal bowl and add toppings:

I’m glad my breakfast was on the larger side because I was given the surprise of no plan time this morning when I got to school. Typically my kids have Spanish on Tuesday mornings, but our Espanol teacher was sick today. That meant no bathroom break and definitely no snack. It was quite sad. I did have fun with my kids for the extra half hour today though — we are working on a fun March Madness Geography project that coincides with the NCAA tournament.

Lunch — 11:30 AM

  • Leftover Cabbage Lentil Stew (loosely based off of unstuffed cabbage roll casserole)
  • 2 slices gluten free bread
  • 1/2 avocado for bread
  • 1 Clementine
  • 1 Adora dark chocolate disk

This was an excellent lunch. I finally feel like I have learned how to pack a good lunch that will keep me full until after school. I hate feeling super full and love eating every couple of hours, but I just don’t have time to eat during the afternoon when I’m teaching so that presents a problem.

The best part of the afternoon was recess! The kids needed a break, and I needed some Vitamin D (doctor’s orders!) — it was a match made in heaven.

Snack — 3:40 PM

On my way home, I snacked on the usual. When I got home, I changed into shorts and a tank top (!!!!!!!!!) and took Charlie for a 40 minute walk. We were both huffing and puffing from the heat! It felt good to have the sun shining on me, that’s for sure.

I really wanted to grill out yesterday evening, but the Husband is working on fixing ours so it’s ready for grilling season this summer. It needed a few parts and a good deep cleaning. I’m hoping it’s up and running this weekend for some more 70 degree temps.

Dinner — 6:15 PM

I did the next best thing to grilling and roasted up another large batch of roasted vegetables. I also ate a half block of tofu. All were dipped in ketchup and hummus, naturally.

After dinner I ate a few pieces of dark chocolate with sea salt (the best kind).

Snack — 8:15 PM

We broke out the grill this weekend and it has been glorious! My favorite food to eat when it warms up is ice cream. I can’t eat it all winter because it makes me cold but as soon as it starts to warm up, I crave fro-yo like you wouldn’t believe!

I am still thrown off by the time change.. AND the coinciding warm up! It is usually quite chilly for a while after daylight savings.. but I need to get into warm weather food asap. It was a hot mess in my kitchen last night while I was steaming vegetables!!

I love fresh fruit when the weather gets warm! Strawberries and blueberries are suddenly replacing my love for bananas and apples. Also, my tea and coffee habits are now geared toward the iced variety!

I wish I could tell you what the weather was like- but it is parent teachers conference week AKA getting to school by 7:10 and leaving at 8:15 or 8:30. I don’t see the outdoors at all— and my classroom has NO WINDOWS, I can’t even see out. Enough pouting for one day. I’ll be able to walk after school today and it is supposed to be super nice! YAY!

I just keep them on the counter, but if you’re worried about bacteria/it going bad/etc you can pop it in the fridge.

I have to say when the weather warms up I eat the same foods, but I drink iced green tea from starbucks a lot! I know when I start getting those, that the weather is getting nice!

I definitely crave anything from the grill. I am basically weird and eat cold oats and ice cream in the winter so I just keep eating what I have been eating. I do love eating outside on my deck.

When it warms up, I like eat more fruit (especially berries), salads, and parfaits. Everybody loves parfaits!

I love veggies on the grill! Can’t wait!! I haven’t mastered my lunches yet… I feel like I’m always hungry a couple hours later and want a snack, but it’s impossible with a room full of students. Like you said, I hate feeling so full after lunch though, so I dont usually pack something substantial enough to hold me over until after school. Maybe add more healthy fats?

The lentil stew looks so delicious! I guess I eat even more ice cream once it starts to warm up;-) That and more fruit–it all balances out.

A couple of dumb questions……for the oatmeal, in the morning, add the milk, egg whites banana & vanila & then boil in the morning, correct? About your lunch…….what kind of bread is that & where do you buy it? Does your avacado turn brow by lunch & do you refrigerate it? About dinner….how did you season your vegtables before you roasted them and did you roast them all at the same time since some veggies take longer to cook than others?

There is no such thing as a dumb question!

1. I boil again in the morning
2. This was a gluten free loaf from OMG it’s Gluten Free. But most of the time, I make my own or I buy a loaf of Rudi’s.
3. My avocado does not turn brown by lunch. It’s refrigerated with the rest of my lunch.
4. Olive oil, salt, pepper, garlic, basil
5. All at the same time – 425 for 45-50 minutes! :)

ahh i cannot WAIT to start grilling outdoors! during the warmer months, we grill for dinner at least 1-2 times per week. it’s so easy and delicious! i also love ice cream and smoothies. :)

That oatmeal looks pretty delicious! I’ve heard a lot about those Adora disks and I want to try them because my calcium pills are ginormous and I hate swallowing pills! Are they super expensive??

I think the bag of 30 was $7? I think they can be pretty dangerous though if you’re a chocoholic and don’t pay attention to the serving sizes – you don’t want to take in TOO much calcium! I stick to one a day.

I love to grill as well! This past winter I’ve roasted so many “new” veggies and am loving them all. My husband said that needs to STOP immediately and I need to start grilling them (no need to heat up the house anymore)! Kind of sad, but am hoping the grilled veggies will taste as good, if not better? then roasted? I’m excited to see what kind and how you grill all your veggies!

Sometimes I “grill” veggies the same way I roast them – put them on a pan, season and stir when they’re on the grill! Or I put them in a tin foil wrap and cook them that way!

Oh man, I’m so jealous of your beautiful weather!! SF has been gorgeous but now it’s pouring rain for the next 9 days… YUCK! And all of your eats look delicious- what a great lunch and dinner! Hope your grill gets fixed soon and when it gets warmer I plan on having an iced Tazo passion tea from Starbucks! It screams summer to me!

Fruit is my go to when the weather starts warming up! I love watermelons, kiwi, blueberries, all the juicy stuff! haha
I too LOVE grilling once the weather gets warm! I made the boy grill us some chicken kabobs over the weekend! We were in the 70s as well and I thought it was necessary! haha
Your roasted vegetables do look like the next best thing though! :)

I love leftovers for lunch, but like you, also like snacking all day long. :) I hear so many people talk about overnight oats– thanks for posting your recipe, we eat rolled oats (stovetop) almost every morning, but this would be so much faster, and I’m assuming it soaks up all that liquid?

Yay for warm weather! It’s been beautiful in LA this week too. I absolutely love it. I can’t wait for summertime- bring on the dresses, tank tops, and sandals!
When the temperatures are warm I crave fruit like mad. That and raw veggies dipped in hummus (although, I would probably still crave hummus in a snow storm…)

Big fresh salads and grilled food are all amazing. I particularly love BBQ shrimp and corn. Not many people grill seafood which is a shame cuz it gives an amazing flavour and smokiness

Hi Leanne,

I didn’t really have a recipe going into it – it just kind of “turned out”! :)

However, if I had to compare it to anything, I would say it is loosely based off of my lentil cabbage soup http://cleaneatingchelsey.com/2011/11/16/cabbage-lentil-soup/

I added a 28 oz can of tomatoes and less vegetable broth so it was more stew-like.

Yes ma’am! Lentils don’t have to be soaked like most beans. They’re so tiny they just need a bit of cooking time!
