warming up

Was it as beautiful where you live as it was where I live yesterday? I don’t know what is going on with this weather, but I will happily embrace it. The temperatures in Chicago were at an all time high yesterday, topping out in the high 60’s. Today, it’s going to get as hot as 78 degrees. I can’t remember a time where this has ever happened in March. We’re usually praying it breaks 60 at least one day.

Peas and Crayons

Breakfast — 6:00 AM

Yesterday morning’s breakfast was incredibly delicious. It hasn’t gotten warm enough in the morning for me to start craving overnight oats quite yet, so I’m still rocking the hot stovetop oats.

At night combine: 

  • 1/2 cup oats
  • 2 cups water
  • 1 tbsp. chia seeds

Bring to a boil and cover. In the morning add:

  • 1/3 cup almond milk
  • 1/4 cup egg whites
  • 1/2 banana
  • 1 tsp. vanilla

Whisk until smooth. Add 1 tbsp. chocolate protein powder. Pour into large cereal bowl and add toppings:

I’m glad my breakfast was on the larger side because I was given the surprise of no plan time this morning when I got to school. Typically my kids have Spanish on Tuesday mornings, but our Espanol teacher was sick today. That meant no bathroom break and definitely no snack. It was quite sad. I did have fun with my kids for the extra half hour today though — we are working on a fun March Madness Geography project that coincides with the NCAA tournament.

Lunch — 11:30 AM

  • Leftover Cabbage Lentil Stew (loosely based off of unstuffed cabbage roll casserole)
  • 2 slices gluten free bread
  • 1/2 avocado for bread
  • 1 Clementine
  • 1 Adora dark chocolate disk

This was an excellent lunch. I finally feel like I have learned how to pack a good lunch that will keep me full until after school. I hate feeling super full and love eating every couple of hours, but I just don’t have time to eat during the afternoon when I’m teaching so that presents a problem.

The best part of the afternoon was recess! The kids needed a break, and I needed some Vitamin D (doctor’s orders!) — it was a match made in heaven.

On my way home, I snacked on the usual. When I got home, I changed into shorts and a tank top (!!!!!!!!!) and took Charlie for a 40 minute walk. We were both huffing and puffing from the heat! It felt good to have the sun shining on me, that’s for sure.

I really wanted to grill out yesterday evening, but the Husband is working on fixing ours so it’s ready for grilling season this summer. It needed a few parts and a good deep cleaning. I’m hoping it’s up and running this weekend for some more 70 degree temps.

Dinner — 6:15 PM

I did the next best thing to grilling and roasted up another large batch of roasted vegetables. I also ate a half block of tofu. All were dipped in ketchup and hummus, naturally.

After dinner I ate a few pieces of dark chocolate with sea salt (the best kind).

Snack — 8:15 PM
