Can I get a “woot woot” for summer? Thank you, and I’m done rubbing it in your face right… now. My days have still been busy, but filled with different activities that are in fact more relaxing and less tiring than teaching all day.
I naturally woke up around 6:00 yesterday morning and laid in bed for a little while until Charlie made me get up. I got ready for the day and set out to make pancakes. I bought some blueberries at the farmer’s market last weekend, and they have been the perfect addition to my breakfasts. I absolutely love berry season.
Pancakes were followed by iced coffee and some blog reading (Hi Elise!).
I made a point to take Charlie for a walk this morning after breakfast since he was going to the groomer today and would be caged up for most of the day. He, of course, loved the walk because since it was early in the morning, a lot of rabbits and squirrels were running around. I didn’t appreciate the pulling though!
I pretty much failed at taking pictures of my food today. I completely forgot as I was babysitting all day. During lunch I was more focused on cutting strawberries into bite sized pieces than my own lunch. I did, however, eat — and it was good! I had leftover lentil jambalaya (recipe to come tomorrow!). We had a fun day while I was babysitting. The day started with a long walk in the stroller to the park and in the afternoon they accompanied me to get new tires put on my car. Bringing books with us was my saving grace for that hour!
When I got home, I got cracking on dinner. I fired up the grill to make some food for the Husband, but the highlight of my meal had been cooking in the crock pot all day long.
I had grilled asparagus, a big salad with about half of an avocado mixed into it (topped with balsamic and hummus), and baked beans! I love baked beans, but never have them enough. I made a big pot of them and froze about half of the leftovers so I can have them the next time the craving hits.
After dinner I had a piece of dark chocolate as well as some honey rice puffins, and sat on the couch relaxing and reading. Fabulous day to end the night!

Between this post and Chelsea’s on baked beans, I suddenly feel a bit guilty that my baked beans come out of a Heinz can- laziness at its finest but they sure do taste great! Pizza is definitely one food which I crave yet don’t make enough! I always say I will but then the idea of spending ages in the kitchen tends to put me off adn then I end up satisfying the craving when I’m out!
haha I wish mine could come out of a can - but most have gluten!
Every single thing about this post made me envious! Summer life is screaming my name (loudly). And that meal??!! Wanna swap lives for the next few days so I can eat your leftovers while you teach my kids?

I love having summers off. Today is my second day off… the only problem for me is that I get bored easily. I’m like a child. haha… and ps: totally having baked beans later now.
I get bored easily too which is why I’m babysitting this summer. Otherwise, it would be hard for me to fill my days!

I always loved the carefree days of summer when teaching. Sounds like you’re doing it up right.
I crave salsa!! Love salsa!! Am a salsa freak!! I have a great recipe that is made with canned tomatoes and is prepared in a blender. From time to time, I will make salsa by cutting up the tomatoes, peppers, onions, etc…if I’m not too lazy!! Enjoy the summer…it flies by!

Since you are a fan of baked beans, you should try the Bush’s Grilling Beans! We keep a couple cans in the pantry at all times for those quick nights where we just need to throw something together.
I wish I could but the ingredient list is not friendly on my stomach!

One food I crave but rarely have time to make is maybe the last veggie burger recipe I made. They were great but had so many ingredients that needed separate or special prep.

If I put in more work M-Th, I have Fridays off. Today’s week 1 of summer hours, so today’s my Friday. Woohoo!
I actually want pancakes quite often, but I don’t want to take the time and effort to make them. But now that we’re in the new house, I need to start making them more!
I find that pancakes are easier and less messy than oats!
I love baked beans too! Soup, I never make soup! It’s so easy too, but I just never take the time to start it in a crock pot and walk away.

I love Summer! Too bad the weather in Boston is anything BUT summer-like today! I like to make stuffed peppers but for some reason I don’t come around to making them that much!

I always crave homemade pizza, but rarely take the time to make the dough from scratch. It’s always worth it when I do though!

Berry season has to be my favorite season - after football season, that is! I’d tell you to enjoy your summer off, but I remember that teachers don’t really get summers off - no classroom time, but still PLENTY to keep busy! I kind of miss it…

oh gosh, i’ve really been loving my iced coffee lately…. right when i’m telling myself i need to cut down. it’s been hard! and i agree, berry season is the best! i’m currently trying to demolish a huge carton of blueberries too.

I crave breakfast foods all of the time but rarely make them because I convince myself that they are so much work…things like waffles, eggs, pancakes, etc. In reality, they’re pretty quick to make…I think it’s just the dirty mixing bowl that I hate washing that intimidates me.

I had baked beans last night, too! Except they were canned and doctored. I’ve never made them in the crock pot before but they look great!

In the winter I always crave stew but rarely take the time to make it - unless my boyfriend hints about it enough!

I will often crave things that are too far of a drive to justify getting. I would love to make beans from scratch to save money on canned beans and to not have to deal with BPA. But the texture just isn’t the same! And I’m not nearly patient enough to make them in advance.
Summers are my fave. No practices to be at for the kids, and a relaxed routine. I crave guacamole more than I should!

sooo…baked beans are pretty awesome and thanks to you i now remembered that i LOVE them!?! what the heck man! thanks so much for that link, i already starred it to be made sooooon. i do adore the canned vegetarian ones, all brown sugar-y and syrupy sweet, but since i have a crockpot i feel like it could make sense to make them on my own.
