Man oh man, yesterday was SUCH a busy day. Well, a busy day by my standards lately. By the time I sat down after dinner, there was no telling when I would get back up again.
I woke up yesterday around 6:00, which is earlier than I’d like to be awake these days. However, the Husband overslept so he was all flustered when he was getting ready. Pair that up with the fact that both of my hands were numb and I couldn’t even clench my fists because they were so stiff, it didn’t make for an easy time going back to sleep.
Breakfast – 6:45 AM
My stomach was also rumbling so I decided to just get up and eat some breakfast. I ate some overnight oats, which is one of my favorite summer breakfasts. I added cherries to my bowl since I bought about 3 pounds at the store on Monday (they were on sale for a ridiculously low price). On the top, I added some crunchy peanut butter.
I spent the first part of the morning doing some things around the house and getting ready for the day which included a shopping trip with my mom and niece Alyssa. Our first stop was Buy Buy Baby to get a lot of the remaining essentials we needed for the girls. Alyssa was absolutely amazed that I didn’t have to spend a dime between the returns I made, the gift cards I had, and the discount I received. It was a great shopping adventure.
Lunch – 12:30 PM
After we left Buy Buy Baby, we headed to lunch at Wildfire at Oak Brook Shopping Centre. My mom and I love Wildfire for their gluten free menu and both ended up getting one of their house made black bean burgers. On the side I ate some balsamic roasted vegetables. Neither one of us could finish our sandwiches – they are so filling, and I left feeling stuffed!
We still had some more shopping to do, so we headed over to Pottery Barn Kids to buy the bedding for the girls. I have to say, the women who worked in that store were probably SO happy once I left. It was quite an ordeal to say the least. I forgot my gift cards in my car and my mom had to go get them (and once she was at the car she realized she didn’t have my keys and had to come back). I received a multiples 10% discount on my purchases but it was a hassle because I was buying some of my things online through the store (they didn’t have it in stock). I wanted to pay for it in all cash, so before I could make my purchase online, I had to purchase a gift card with my cash and then apply the gift card online. It really was quite a funny experience, but oh my goodness was I tired when I left that store. I’m pretty sure I stood at that counter for a good hour!
Dinner – 6:00 PM
Dinner was easy yesterday evening because I decided to bust out the crock pot in the morning. I made BBQ pulled pork sandwiches. Seriously – easiest recipe ever. All I do is put one diced onion, a pork tenderloin, and about a cup of barbecue sauce into the crock pot and let it cook on low all day long.
The Husband and I enjoyed our fancy romantic anniversary dinner together – complete with green beans and corn.
I have been craving sweet corn like nobody’s business lately – which is really a great thing for my digestive tract. (not)
And now that this is all said and done, I realized I didn’t snack at all today which means I have to go make up for it now.
(edited to add: I had a frozen fruit bar, a Larabar, and some cherries throughout the night. Apparently it helped because I slept in this morning until 8!)

Everything looks yummy! We just made pulled pork in the crock pot over the weekend! It’s so good and I do love my crock pot! In fact, I just posted an easy and delicious recipe for slow cooker chicken cacciatore yesterday!

I just said to my husband last night that I am excited for Fall and to bust out my crock pot again! We get into such a routine in the summer of just salads and grilling, but I’m exciting to get back into regular cooking or lack there of with the crock pot! We make chili at least once a week and it’s always a favorite…it only takes 10 minutes to prep and it’s waiting when you get home
My crockpot is seriously a lifesaver, I love coming home at the end of the day to find dinner (more or less) ready to go!

I crave corn in the summer, too, especially on the grill! I’m pretty sure every time I pass a farm stand with corn I stop for some! I just can’t get enough but my stomach would say otherwise. Oof. Happy anniversary to you and the hubs!
Don’t you just LOVE overnight oats? I am addicted right now!! And that bean burger looks awesome. I can appreciate a good made-in-house restaurant veggie burger since some places seriously lack in flavor/quality.
I always save all my gift cards up so I can put them together. I love going shopping and not spending any money. Best feeling ever.
love your shopping adventures- i think a lot of people would have given up before spending all that time to use their cash/giftcards/discounts! as for the crockpot, we’ve done bbq pork but never added onion- what a good idea! We also like doing crockpot chicken with some bbq or salsa! Or make them plain and you can have plain shredded chicken to make chicken salad! ok crockpot love-fest over
It’s official - I need a crock pot in my life. I keep telling myself that I’ll get one and then letting the season pass me by, but I have a good feeling this year’s going to be the one. Maybe it’ll help me stop eating breakfast for dinner so often
I’ve been craving roasted green beans like crazy, and this post made me crave them even more;)
For some reason the Summer makes me crave them more, even though I’m pretty sure it’s a Winter food.
I seriously love my crockpot for the reason it makes everything about 1000 times easier. Whoever invented it is a genius.

My favorite easy meal is deer/beef noodles. I cook 1 package of noodles in 1 box of beef broth and add a quart of canned deer/beef meat (whatever we have in the cupboard). The amount of beef broth is perfect for the noodles so no draining required and it gives them a nice flavor. Takes about 12 minutes and no work! Plus it feeds us for days and it’s very cheap since we have our own beef and hunt the deer
I love my crockpot and have never done pulled pork. I’m gonna have to try that soon!
When the girls are born do you think you will go back to being a vegetarian? I’ve noticed that you’ve eaten meat throughout your pregnancy. I dont think I could ever go without it!
Hopefully we get a peek at the nursery! I love anything Pottery Barn!

I love easy crockpot meals. As of lately, my husband and I have been enjoying crockpot chicken caesar sandwiches. They are SO good.
I’m new to this clean eating thing so I’m not sure how clean this is (but I think relatively?)…I make a crockpot thing, chicken breasts, black beans, rotel tomatoes, chopped onion, chili powder, garlic powder, cumin, oregano, cilantro.
Serve with tacos.
Kids go for more and more!

Question on the overnight oats, do you only make them the night before? I was thinking they seem so quick and easy I wonder how many days worth you could make at a time with them still tasting good, have you ever ate them after a day or two? Just wondering
Yup - the night before. I mix 1/2 cup oats with 1 cup liquid (usually almond milk), vanilla, and sometimes chia seeds or flax if I have it. I’ve eaten them after like 36 hours before and they’ve been fine.
Awesome! Think I might have a new breakfast go-to for the early mornings I’ve been having to get used to lately

I have never been to Pottery Barn. I think I have been missing out. I’m not even sure if there is one near me but I need to check it out! Ever since Rachel on Friends mentioned it I’ve wanted to buy something from there
Our household favorite is tacos! We have made them once a week for the past 4 years and we still can’t get enough!!
I love pulled pork, and yet I’ve never made it for myself before! Now that I’m living at home for the year and have access to my parents’ crockpot, that will definitely be happening! My favourite easy meal to make that my whole family loves is minestrone soup. It uses mostly canned ingredients so it’s super easy to throw together!
I do taco salad bowls for an easy dinner. Lettuce, whatever veggies I have on hand, salsa, sour cream or guacamole and beans with chips on the side.

Ahhhh…the joys of gift cards! We’ve been married for almost 3 years and I found a few gift cards in my wallet the other day from our wedding. So awesome! Ha!
