Let’s talk salsa.

Because really – there is nothing quite refreshing like fresh salsa on a hot summer day. There is nothing quite as refreshing as fresh salsa on a cool summer night.

Let’s just face it – salsa rocks.

Now, I have nothing against jarred salsa. In fact, I regularly buy the jarred variety when I go to the grocery store. However, yesterday when I was in Trader Joe’s, I saw what was a pint of fresh salsa, looking so delicious in all of its pico de gallo goodness. I picked that baby right up, looked at it’s $4.99 price tag, and promptly put it right back on the refrigerator shelf.

Instead, I did what any other reasonable woman would do. I looked at the ingredients, and found out I only needed two more of them. Grateful, I picked up a lemon and a jalapeño pepper.

At that exact moment I vowed something very important to myself: I was not going to touch my eye while chopping up the jalapeño.

You laugh. I cry.

Easy Pico de Gallo (makes 2-3 cups)

  • 2.5 tomatoes on the vine
  • 1/2 onion, diced
  • 1/2 jalepeno, de-seeded and diced
  • juice from 1/2 lemon
  • 2 cloves garlic, minced
  • 1/4 cup green pepper, diced
  • 1/3 cup fresh cilantro, diced
  • 1 tsp. apple cider vinegar
  • 1 tsp. garlic powder
  • salt and pepper to taste

First things first: gather those veggies!

And start dicing away. Believe me – it doesn’t have to be perfect. It doesn’t have to look pretty. It will all taste the same.  You’ll want all that juice from your tomatoes to make up the liquid in your salsa.

Make sure you de-seed your jalapeño – unless you like it reaallly hot. In that case, keep the seeds. Live on the wild side.

Once all your vegetables are diced and ready to go, put them into a large bowl with the cilantro, apple cider vinegar, lemon juice, and spiced. Mix to coat and refrigerate until ready to serve.

If you’re anything like me, you can’t wait long enough for all the flavors to permeate together. I dove into this about 30 seconds after this picture was taken – sans chips, because those were for show. Can’t a girl even get a Scoops around here? ::sigh::

However, if you’re my Husband, you are – a) very lucky to have a lovely lady in your life and b) the master salsa taste tester once it has been sitting in the fridge for a few hours.

Wives, remember this: if you want your husband to forget all that you have done in the past, just make him fresh salsa. The Husband hates tomatoes, but he loves salsa. Does this make any sense? Probably not.

pre-cut veggies, i.e. watermelon, pineapple, etc

they are all a rip off!

DIY is best. And tastes best anyway!

I don’t understand tomato haters. Maybe in winter when they are fake tomatoes – but summer tomatoes are seriously the best!

Fresh salsa with Trader Joe’s flaxseed tortilla chips is seriously the best!

Salsa is one of those things that is so easy to make that we take it for granted and end up buying it premade.
I agree fresh salsa is way much better.

Gah! I absolutely LOVE salsa, but I’m always too lazy to make my own. I could eat it straight out of the jar though :D Salsa, guac, and tortillas definitely scream summer for me. And unfortunately, yes on the eye thing :( I rubbed my eyes once after chopping onions… Very much ow.

I remember making chili one time and I got cayenne pepper getting into my nose and eyes. AHH it was brutal! I could not live without salsa! I actually just mentioned it in one of my posts :)

When I first moved to Arizona from the midwest, I instructed my husband (loudly) in a local grocery store not to touch his eyes after he put peppers in our cart. I got a few weird looks from some natives :) This definitely reminds me of that! Salsa, guacamole and watermelon are my all time summer food loves :)

Tomato paninis. And squash casserole. And corn. The list goes on and on!! One time I cut up a jalapeno with my bare hands and did NOT touch my eye. They felt fine for a few hours but later that night they hurt so bad I cried. Now I use rubber gloves :)

I love to add black beans, grill roasted corn, and diced avocado. The avocado makes it creamy and delicious. I’m a typical Texan that can’t get enough pico!

Looks great! homemade guac and salsa are my favorites in summer time, but i’m allergic to onions so it’s literally virtually impossible for me to eat it anywhere but home made. i do LOVE jalapenos though! One time I think I had a super spicy/ juicy one and even after my washing my hands thoroughly I itched my eye and it has never burned so bad. I also itched my neck and a huge red splotchy mess appeared. Not fun! My trick : baking soda. From now I always rub my hands generously in baking soda and wash off. All jalapeno residue will be gone and u can itch away! Seriously so painful- i totally feel u. That is something to congratulate :)

I would have to go with salsa of every kind, tomato, pineapple, mango! I love them all :) Yes, I have touched my eyes way too many times when I should not have. But don’t learn!

No joke, I’ve gotten hot sauce up my nose before…yep, caught red (hot) handed picking ma nose. I really don’t have any shame cause everyone’s got a little nosey itch sometimes ;) right?! Anywho! OUCH your eyeball! I can’t even imagine!

You do NOT wanna know how much pain I was in after touching my eye after dicing a jalapeno. It started around my eyes (the red and utter burn) then expanded all the way to my cheeks. I could not open my eyes without feel like I was lying in a campfire and my face felt like it was a thousand degrees. I really hope people follow your advice when making this…or else you’re gonna end up like me, a burn victim.

Homemade pico….swoon. I wish I were making homemade salsa for my BBQ tomorrow, but with 50 people coming, storebought is the way to go. Why waste the good stuff on family, right? ;)

okay, the eye-touching totally sucks after dicing a jalapeno. BUT have you ever had an awful inside-the-nostril itch after dicing a jalapeno?

no. I wasn’t picking my nose; I have horrible, terrible allergies which I get biweekly shots for. but I was having an allergy attack, literally itched the inside of my nose, and prompty paid for it for about 10 minutes afterwards.

I probably shouldn’t have just admitted that. to anyone. woops.

I just made my own pico de gallo last week and it was so good! Thankfully I didn’t touch my eye after touching the jalapeno either. But I have an allergy to cats and I always pet them and then touch my eye, which makes it so watery and itchy! :P

Oh I looooooooooooooove salsa sooooooooooo much. One of the best condiments out there. Sometimes I eat it with a spoon. Last summer Mike’s mom got this insanely hot pepper from someone and we fed it to his teenage brother. hahahaha :)

I absolutely LOVE pico de gallo! Its the cilantro, I think; they say you either love cilantro or hate it, and I LOVE it. Our favorite Mexican place always brings us complimentary in-house-made tortilla chips, salsa, and pico de gallo… and I always steal the bowls of pico de gallo and eat it like soup with my spoon! Sooooo good.

Oh yes, I’ve touched my eye after chopping hot peppers…one of the worst mistakes ever! Plus I have contacts and gets all under em’….ouch!

Pico is one of my favorites, so simple yet delicious full of flavor. I think it’s perfect for summer! I also love a fresh guacamole! :)

Haha, I’m the same about disliking tomatoes (something about the texture/consistency?) but loving salsa, ketchup, marinara sauces, and everything else tomato-based. I’m a weird one! : )

YES! Thank you!!!! We are having dinner guests tonight (one who is pregnant and is only liking simple foods these days) and this post just made me settle on what to make for dinner! Fancy-fied burritos, with home-cooked beans, with guacamole and this pico de gallo!!! It looks delicious!!!

I made salsa last summer and got jalapeno in my eye. It was awful!!!
I would say fresh salsa is one of my fav summer dishes as well as anything grilled, ie. grilled veggies!!!

alright, you’ve inspired me… must make salsa this week!!! Those pictures just looked delicious! And I love making homemade quacamole… mmmmmm. I always touch my eye, my boyfriend calls me jam-hands cuz I’m always getting something in my eyes from my sticky fingers ;)
