I am so obsessed.
I don’t know what I’ve been doing for the last 24.5 years of my life, but why I had never made savory oats before three nights ago is beyond me. I loved them so much that I had to make them again last night. It is a deep love, as I made two separate meals because the Husband would never touch this with a 10 foot pole. This is a 10 minute dinner that is beyond delicious and boasts simplicity.

- Drippy Egg
- Bone Suckin’ Sauce & Nutritional Yeast
- Over Easy Savory Oatmeal with Kale (serves 1)
For the Kale
- 1/2 bunch kale, trimmed and rinsed
- 1/4 small onion, diced
- 1/2 tbsp. olive oil
- 2 tbsp. water
For the Oats
- 1/2 cup oats
- 1 and 1/4 cups water
- 1 tbsp. nutritional yeast
For the Egg
- 1 egg (ha!)
In a large pan, heat 1/2 tbsp. olive oil. While the olive oil is heating, dice your onion and prepare your kale by trimming the leaves off the stem (the stem will be bitter if eaten). Add the kale and onion to the pan and add 2 tbsp. water. Lower the heat to medium, cover, and stir occasionally until tender and wilted (~5 minutes)
In a small sauce pan, combine 1/2 cup oats, 1 and 1/4 cups water and 1 tbsp. nutritional yeast. Cook oats on medium low heat (low and slow!), stirring occasionally until the liquid is absorbed and oatmeal is tender.
While the oatmeal is cooking, heat a small saute pan and spray with cooking spray. Crack one egg into the pan when heated and cook for 90 seconds on each side (or your desired way to cook an egg).
Layer the kale, oats, and oatmeal — then sprinkle with desired toppings!
