80 degree soup day

October 25, 2010

I know I threw you all off with the double duty posting today. For this, I am sorry. However, I know I am not sorry for posting the Roasted Toasted Dilly Chickpeas recipe. Because well, they’re delicious.

I made it out of bed this morning at 4:30 — blah. I slept horribly last night. I wasn’t really that tired when I went to sleep, which never turns out well. Unless I am completely 100% exhausted, I should just stay up until I am tired. I vaguely remember yelling at the husband for waking me up when he came to bed — although I was apparently sprawled across the entire bed. And somehow, throughout the course of the night, the Husband ended up with my pillow and I ended up with no pillow.

Nothing a good workout and a bowl of oats couldn’t fix!

October 25, 2010 001

That apple looks delicious right? It blew. No, seriously… I’m thinking about gong back to the farmer’s market to yell at the girl who told me they were crisp. I’m sorry, but they were the least crisp apples I have ever eaten. Thanks lady.

When I got to school today, I found the funniest sign had been put into our parking lot.

October 25, 2010 007

I have a few problems with this sign.

1) Of course children are breathing. Who was assuming they weren’t?

2) Are adults breathing not important enough to make the sign?

For my morning snack today, I busted out another Nuts Online sample…

October 25, 2010 002 October 25, 2010 003

Dried Fruit Cocktail! I was really intrigued with this. It certainly was colorful!

October 25, 2010 004

And I also had the most fun trying to decide which fruits I was eating. It was really good, but kind of reminded me of a snack you could feed a toddler. So, if there are any mommies out there, this would be great for your kids! I can also see myself wanting to put it on top of oats for some extra crunch or in cereal at night for my snack. Overall, I really enjoyed it. Stay tuned for some more Nuts Online action at the end of this post!

Lunch was leftover Veganized Mac ‘n Cheese — it surely did not disappoint again.

October 25, 2010 005

I also had the rest of that really bad apple. It definitely was not picture worthy. I’m pretty sure the whole I was eating it, I was thinking, “Why am I eating this?” However, I did eat it, so I digress.

Remember how I was ranting about my contacts? I’m pretty sure my contacts were not the issue. Yes, my contacts have been ripping more than usual, but I’m pretty sure I have a scratch on my cornea. I could not even keep my right eye open today. It was tearing up and was so bloodshot that a few of my students even pointed it out to me. The second I got home, I took them out, checked for rips (none), and put on my glasses. Almost instantly, the pain stopped. I think the contacts are irritating my eye/the tear more. I was going to go to the eye doctor, but I figured all he would tell me is to keep my contacts out for a few days to let my eye heal. I don’t need to waste an hour of my life for him to tell me that. I am mad though — I think we all know how I feel about wearing my glasses.

I also had to go make a special purchase after school today….

October 25, 2010 008

Don’t even hate me for loving Taylor Swift. I am such a teeny bopper when it comes to her music — I love it. With that being said, if you feel the need to redirect yourself to a different blog at this time, I totally understand.

When it came to dinnertime, the picture below really made me hate how dark it gets outside at 6:00 now.

October 25, 2010 011

Which is why I love the ability to lighten photos on the computer! Much better.

October 25, 2010 009

A huge salad topped with Angela’s Better than Bottled Balsamic and a heaping pile of hummus!

I also made a huge pot of veggie soup for dinner tonight. There’s really no science to my soup making when it comes to veggie soup. My method is as followed:

  • Heat Dutch oven with a tbsp or two of olive oil.
  • Throw onions and garlic into the pot to sautee.
  • Pour in veggie broth when it’s translucent
  • Add remaining veggies & grains/protein(whatever veggies you have on hand will do). Tonight’s mix was:
    - carrots, broccoli, red pepper, brussels sprouts, mushrooms, lentils
  • Season, simmer, enjoy!

October 25, 2010 013

Be prepared to see a lot of soup in my future. I basically exist off of it in the winter time. Although today it was 80 degrees? What is up with this weather Chicago? I love big pots of soup because it makes for easy lunches during the week!

I’m a teeny-bopper for Taylor too! She’s great! Ooh and your salad looks amazing, dark and light!

Jordan P October 25, 2010 at 8:08 pm

Ooooh DEFINITELY the chili lime pistachios. yumbo!

Sarena (The Non-Dairy Queen) October 25, 2010 at 9:08 pm

Sorry about the lack of sleep. That is a bummer. I am with you when I get a bad apple, I want to take them back! I hate mealy gross apples. The soups looks delicious! Sleep well tonight!

Hannah V October 25, 2010 at 9:17 pm

I would love to try any of their dried fruits! oorrrrrr I saw halloween gummy bears on their site too yummo :]

helennaturally October 25, 2010 at 9:40 pm

I love Taylor Swift! My baby sister (as in shes 10) and I saw her in May. Loved the show!

I am really interested in trying those chocolate covered sunflower seeds. I love chocolate covered peanuts/almonds. Never thought of seeds….I forsee an order in the future!

Megan October 25, 2010 at 10:53 pm

Eek. your eye issue made me cringe. If it’s still bothering you tomorrow I’d consider popping into your eye doc. They can give you some steroid drops that will make your eye feel better quickly. I had the same issue last fall and it turned out to be a corneal ulcer…which can lead to blindness if you let it go :(

Liz October 26, 2010 at 6:23 am

Chili lime pistachios sound delicious!

Amy @ Second City Randomness October 26, 2010 at 6:25 am

I think I’d love the chocolate covered sunflower seeds (ha ha- of course I would!). I already have thoughts in my mind of what I could do with them… hmmm….

And I don’t mind Taylor Swift so much. I’m just a little annoyed of how on her newer commercials she’s basically just bragging about how she’s exploiting all her past relationships.

If only her tunes weren’t so damn catchy…

carascravings October 26, 2010 at 6:42 am

I hate bad sleeps!
Totally throws off the whole day.

I would anticipate the acai-blueberry cereal…yum!

Simply Life October 26, 2010 at 7:30 am

Oh I’d love to try their veggie chips!

Ha, that sign is pretty hilarious!

Gabriela @ Une Vie Saine October 26, 2010 at 7:46 am

Um okay, I’m going to go download the new Taylor Swift CD NOW. I didn’t know it had been released!! I love her. Call me a teenybopper, but her music just makes me smile :)

cleaneatingchelsey October 26, 2010 at 7:56 am

I am currently listening to her CD and trying to memorize every last word. haha!

missymiller October 26, 2010 at 9:09 am

mealy apples…..boo.

chile lime stachios? yay!

when I firsat saw the sign I thought the “smoke” with the strikethough image was a curled up baby…and I was very confused for many minutes.

Freckled Foodie October 26, 2010 at 9:19 am

yay! i would love to try the gluten free sampler! i could really use some on the go, easy access snacks like this right now while i’m trying to juggle working full time, school part time and basketball practice in between! thanks, chels! <3

the Acai Blueberry Superfood Cereal looks delish!

Ameena October 26, 2010 at 10:03 am

That sign is too funny! I think Maya’s school needs it posted every few feet…remember Escalade Dad and his addiction to idling??

I HATE wearing my glasses but my contacts drive me crazy too. And when the weather is dry I can barely see because my contacts get so dry. Naturally this is a problem since I basically live in a desert! I hope your eyes feel better today!

JW October 26, 2010 at 10:38 am

The simply fruit cocktail or the blueberry cereal!

Syndie October 26, 2010 at 10:57 am

I hope your eye is better today! I love your blog and just started eating clean on 9/6/10. I would love to try the gluten free sampler and would be super excited about Acai Blueberry Superfood Cereal. I could add that to my morning oatmeal :)

Enjoy your CD!

Vera October 26, 2010 at 11:00 am

girl tswift’s new song with “john” in it.. is it about john mayer?!?! haha i wondered about that!

Balanced Healthy Life October 26, 2010 at 2:08 pm

I heard it was about John Mayer.

By the way, I laughed at that sign. At first glance I thought it was for kids not being allowed to hold hands. Then I finally got it when I looked at it a second time!

The veggie chips look great!

Maria October 26, 2010 at 3:59 pm

Heyy, just stumbled upon ur blog. Wanted to drop in and say that ur mac n’ cheese looked delish…as did your veggie soup!

Olivia N. October 26, 2010 at 5:23 pm

I’ve always been curious about those freeze dried fruit things. They’re usually a bit too pricey for my college student diet, so this would be a great chance to sample them, along with other goodies!

Olivia N. October 26, 2010 at 5:24 pm

Healthy Coconut October 29, 2010 at 4:40 pm

Chilly lime pistachio sounds interesting, I’m up for trying that :)

I loved Taylor Swifts previous album. My co-worker got us tickets to her concert last year and I didn’t know most of Taylor’s songs so she made me a CD and I was hooked. I memorized each song and sang the whole concert with her.

Surprised guest that night at the Staples Center was John Meyer. He sang a duet with her and he sang the part “I’m not a princess….” lol.

cleaneatingchelsey October 29, 2010 at 6:03 pm

it is interesting because she now has a song about him!!

Healthy Coconut October 29, 2010 at 4:41 pm

I’ve added you to my reader.
